These slow cooker chicken fajitas are everything you want in a weeknight dinner: easy, delicious, and practically effortless. Whether you're feeding a hungry family or just meal-prepping this recipe's going into your regular rotation - guaranteed!
Basic Ingredients
- Chicken- Use chicken breast or thighs.
- Bell peppers and onions- A classic fajita ingredient. Use any bell pepper color combination you like.
- Fajita seasoning- You can use your own or purchase a store-brand packet for ease.
- Tortillas- Use flour, corn, low-carb, or even gluten-free tortillas.

Toppings: sour cream, shredded cheese, fresh avocado, tomato slices

Layer ingredients- Add chicken to a slow cooker and season with fajita seasoning, then top with peppers, onions, more fajita seasoning, and lime juice.
Cook low and slow- For the best flavor cook on low for 6-7 hours but you can also cook on high for 4-5 hours.
Slice chicken and mix- When chicken is cooked and tender you can shred, slice, or dice. Combine with the peppers and extra liquid in the slow cooker.
Serve with tortillas and extra toppings- Add chicken and veggies down the center of a warm tortilla and top with your favorite toppings.







Tip
Slice the peppers and onions on the thicker side so they stay crisp tender and don't turn into mush.


Slow Cooker Chicken Fajitas
Equipment
- 1 6 Qt Slow Cooker
Ingredients
- 1 ½ pound boneless skinless chicken breast, about 3 medium breasts
- 1 small green bell pepper, sliced
- 1 small red bell pepper, sliced
- ½ large onion, sliced
- 1 standard size packet fajita seasoning
- 1 medium lime
- 8 regular size tortillas
Additional toppings
- shredded cheddar cheese
- sour cream
- fresh avocado or guacamole
- diced tomatoes
Instructions
- Place 1 ½ pounds chicken in a 6 qt slow cooker. Season both sides with fajita seasoning. I use about ½ the packet. Scatter bell pepper and onion slices over the top of the chicken and sprinkle on the rest of the fajita seasoning. Squeeze the juice of 1 medium lime over the peppers and onions and use tongs to toss and combine.
- Place the lid on and cook on low for 6-7 hours or on high for 4-5. Remove the chicken from the slow cooker and shred, slice, or dice. Place the chicken back in the slow cooker and toss with the veggies and excess juice to give the chicken extra flavor. Serve with warm tortillas and additional toppings if desired.
