- Chicken- This could be chicken breast or thigh meat.
- Chicken broth
- Potato Gnocchi- Use frozen or fresh
- Veggies- Onions, carrots, celery, and spinach.
- Pantry seasonings
- Tomatoes
- Half and half- Heavy cream works also.
- Water and corn starch- This will help thicken the broth.
- (Optional) Parmesan cheese and parsley for serving.

Easy To Make Chicken Gnocchi Soup

- In your slow cooker insert combine chicken, veggies, seasonings, and chicken broth. Cook on high for 3-4 hours or on low for 5-6.
- Remove the cooked chicken and shred or dice. Place back in the slow cooker along with gnocchi, tomatoes, half & half, and corn starch combined with water. Cook another 15-20 minutes until gnocchi is tender and broth has slightly thickened.
- Stir in spinach and wilt about 5 minutes. Serve with parmesan cheese and fresh parsley.

Helpful Tips When Slow Cooking Chicken Gnocchi Soup
- For a lighter version, use whole milk or unsweetened almond milk (with thickener) if you're trying to keep this dairy free.
- Make it gluten-free by using gluten-free gnocchi and thickener.
- Don't overcook the gnocchi. Cook just until it's tender. It should be pillowy, not mushy.



Slow Cooker Chicken Gnocchi Soup
Equipment
- 2 qt or larger slow cooker
Ingredients
- 1 large chicken breast, boneless skinless
- ⅓ cup onion, diced
- 1 large celery, diced
- 1 large carrot, diced
- 2 cups chicken broth
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ¼ teaspoon dried rosemary
- 1 small dried bay leaf
- 8 ounces potato gnocchi frozen or fresh
- ½ cup cherry tomatoes, halved
- ¼ cup half & half
- 2 teaspoon corn starch
- 1 tablespoon cold water
- 1 cup baby spinach, fresh
- fresh parsley to garnish optional
- grated parmesan cheese to garnish optional
Instructions
- In your slow cooker add 1 large chicken breast, ⅓ cup onion, 1 large celery, 1 large carrot, 2 cups chicken broth, ½ tsp salt, ¼ tsp pepper, ½ tsp Italian seasoning, ¼ tsp rosemary, and 1 small dried bay leaf. Stir to combine and place the lid on. Cook for 3-4 hours on high or 5-6 on low.
- Once chicken is cooked and tender, remove from the slow cooker and shred or dice. Place back in the slow cooker along with 8 ounces gnocchi, ½ cup tomatoes, and ¼ cup half & half. Mix together 2 tsp corn starch with 1 tbsp cold water and stir to dissolve. Add to the slow cooker and stir everything together. If your slow cooker is on low, turn it to high. Place the lid back on and cook another 15-20 minutes on high or until gnocchi is tender.
- Stir in 1 cup baby spinach. Once wilted, the soup is ready to serve. Garnish with grated parmesan and parsley if desired.
Notes
- Refrigerate leftovers in an airtight container for up to 4 days.
- Gnocchi can soak up liquid, so if needed, add a splash of broth or milk when reheating.
- It is not recommended to freeze this soup.
