This Slow Cooker Garden Beef Stew is the kind of comforting, no-fuss dinner, that fits any season. In the summer, it’s a great way to use up garden-fresh veggies—zucchini, green beans, tomatoes, whatever you’ve got overflowing on the counter. But it’s just as perfect on a chilly day when you’re craving something warm and hearty.

Whether you’re coming in from the garden or bundled up in a sweater, this stew brings that cozy, home-cooked feeling without spending hours at the stove.

Basic Ingredients For Garden Beef Stew

These are the fresh veggies we used in our beef stew, but feel free to mix and match with whatever you have on hand or what’s in-season. This stew is super flexible!

  • Beef- We use the pre-cut packs of stew meat from the grocery store–typically cut from a chuck roast.
  • Beef broth- Make sure to use a good quality, rich flavored beef broth. We like better than bouillon beef base, or beef bone broth.
  • Fresh veggies– Green beans, carrots, onions, bell pepper, corn (if in-season) celery, and potatoes.
  • Flavor enhancers– Worcestershire sauce, garlic, pantry seasonings, and canned tomatoes.
  • Flour- This helps thicken the broth while the stew slow cooks.

Easy To Make Beef Stew-Step by Step

This is truly a dump and slow-cook kind of meal. No searing the meat first. Just chop up your veggies, open your canned tomatoes, and pull out your pantry seasonings. So easy!

  1. Toss the stew meat with flour, salt, pepper, and onion salt.
  2. Combine the beef, all the veggies, tomatoes, Worcestershire, and beef broth in your large slow cooker.
  3. Cook on low for 8-9 hours. Season with salt and pepper to taste.

Helpful Tips

  • Sear the meat first– Optional but does add additional flavor. We kept this super simple and skipped this step and the stew is still exceptional with great flavor.
  • Cook low and slow– Beef stew is really best if it has time to slow cook for hours. This will ensure the beef is melt-in-your-mouth tender.

Ingredients

  • 1 pound stew meat cut in 1 inch pieces
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion salt
  • 2 tbsp all-purpose flour
  • 2 medium carrots cut in bite size pieces
  • 1 cup corn, fresh, frozen, or canned
  • 1 large celery rib, diced
  • 1/2 cup red bell pepper cut in chunks
  • 1/2 medium yellow onion, diced
  • 8 ounces fresh green beans cut in half or thirds
  • 2 small russet potatoes, peeled and cut in 1 inch pieces
  • 1 (15) ounce can petite diced tomatoes with juice
  • 1 tsp Worcestershire sauce
  • 2 minced garlic cloves
  • 1 cup beef stock
  • salt and pepper to taste

Instructions

  • Start by coating 1 pound of beef cubes with 2 tbsp flour, 1/2 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp onion salt. Add the beef to the bottom of your 6 qt slow cooker.
  • To the slow cooker add the remaining ingredients–2 medium carrots, 1 cup of corn, 1 large celery rib, 1/2 cup bell pepper, 1/2 medium yellow onion, 8 ounces fresh green beans, 2 small russet potatoes, 1 can petite diced tomatoes (with juice) 1 tsp Worcestershire, 2 garlic cloves, and 1/2 cup beef stock.
  • Stir to combine the beef and veggies, then make sure the beef is pushed down into the veggies. Place the lid on and turn the slow cooker to low. Cook on low for 8-9 hours or until beef is super tender. Season to taste with salt and pepper if needed and enjoy.

Notes

Freeze leftovers: This stew freezes well. Just cool completely and store in freezer-safe containers.
