The first time I tried Reuben dip was at a casual wedding for friends, and I'll never forget that first bite. It completely caught me off guard--- salty, tangy, creamy, and savory all at once, like a warm, melty Reuben sandwich in dip form. I could've easily eaten it straight with a spoon!

What You'll Need
- Corned Beef- You can usually find this pre packaged in the deli section.
- Cream cheese- Make sure it's full fat cream cheese so it's extra creamy
- Sour cream
- Thousand island dressing
- Sauerkraut - Fresh is best but canned will work also.
- Swiss cheese- I find freshly shredded Swiss cheese melts creamier than pre-shredded.

Easy To Make, Just Dump and Cook
- Add all the ingredients to the slow cooker, give it a light stir and place the lid on. Cook on low for 2-3 hours, stirring once in between. Serve with crackers and veggie sticks.



Helpful Tips and Variations
- Rinse and Drain the sauerkraut well: While rinsing the kraut will remove some of the saltiness, make sure to also drain well so the dip isn't runny.
- Use leftover corned beef: The perfect dip for St. Patrick's Day leftovers!
- Chop corned beef small: You want the pieces of meat to be small so each bite has the perfect balance.
- Add a little kick: Stir in 1-2 teaspoon horseradish sauce or spicy mustard for a tangy bite.
- Make it extra cheesy: Substitute part of the Swiss with Gruyère or provolone for richer flavor.
- Short on time? Combine ingredients in an oven safe dish, covered, and bake at 350℉ until hot and bubbly, about 25-minutes.
Can You Freeze Reuben Dip?
Yes! Allow the dip to cool completely then freeze for up to 2 months. Thaw, then reheat in the slow cooker, microwave, or oven. The dip may separate after freezing. Just give it a good stir and it will come together nice and creamy.



Slow Cooker Reuben Dip
Equipment
- 2 qt or larger slow cooker
Ingredients
- 8 ounces corned beef, chopped well
- 8 ounces cream cheese
- 1 cup sour cream
- 1 cup sauerkraut, rinsed and well drained
- ¼ cup thousand island dressing
- 1 ½ cups Swiss cheese, shredded and divided
- caraway seeds to garnish optional
Instructions
- Add all the prepared ingredients to a slow cooker, reserving ½ cup cheese for later. Stir to combine. It will be chunky from the cream cheese. Place the lid on and cook on low for 3 hours, stirring once in between.
- About 20-minutes before the dip is finished cooking, sprinkle on the remaining ½ cup cheese and caraway seeds if you have them. Place the lid back on and allow the cheese to melt. Serve with crackers and veggie sticks.
