  2. Make the Topping: In a mixing bowl combine dry ingredients using a whisk—flour, sugar, baking powder, and salt, then stir in the wet ingredients—eggs, melted butter, milk, and vanilla extract, until a sticky dough forms.
  3. Assemble: Spoon dollops of the topping over the berry mixture. Don’t worry about covering all the fruit, it will spread as it cooks.
  4. Slow Cook: Set slow cooker to high and cook for roughly 3 hours or on low for 5-6. The fruit should be bubbling and the top lightly golden and cooked through.
  5. Cool slightly: Not too much! You want to serve it nice and warm.

Ingredients

Berry Mixture

  • 4 cups mixed berries blackberries, blueberries, strawberries, and raspberries
  • 1/2 cup granulated sugar
  • 1/2 medium lemon, juiced
  • 1 tbsp corn starch
  • 2 tbsp melted butter

Cobbler Topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup melted butter
  • 2 tbsp milk
  • 1 egg, lightly beaten
  • 2 tsp vanilla extract

Instructions

  • Add 4 cups of berries to your slow cooker along with 1/2 cup sugar, 1/2 lemon, juiced, 1 tbsp corn starch, and 2 tbsp melted butter. Toss gently to combine.
  • In a medium size mixing bowl combine 1 cup flour, 1/2 cup sugar, 1 tsp baking powder, and 1/2 tsp kosher salt. Use a large spoon to carefully stir in 1/2 cup melted butter, 2 tbsp milk, 1 egg (lightly beaten) and 2 tsp vanilla extract. Be careful not to overmix. The batter should be thick and a little sticky.
  • Use a spoon to dollop the batter on top of the berry mixture until most of the top is covered. See post for images. It's okay if the top is not completely covered.
  • Place the lid on your crockpot and set to high. Cook for 3 hours, or set to low and cook for 5-6 hours. The berry mixture should be bubbly and the cobbler topping cooked through and golden.
  • Allow to cool 5-minutes before serving.
