Extra flavor- Sear the chicken breasts or thighs in a skillet before adding to the slow cooker. This offers so much flavor.
No fresh herbs? Substitute with 1 teaspoon each of dried rosemary and thyme or other dried herbs on hand.
Easy Step By Step Slow Cooker Summer Chicken
- Season and brown chicken- Season your chicken on both sides with onion powder, salt and pepper, then sear in a skillet with olive oil (or if you have a stovetop safe slow cooker insert) until golden brown.
- Layer veggies- Add prepared veggies to the bottom of your slow cooker.
- Make the sauce- Combine the broth, lemon juice, flour, and additional seasonings in a bowl. Pour over the veggies and toss to combine.
- Add chicken- Place chicken and herbs on top of the veggies and cook on high for 3-4 hours or on low for 7-8 hours.

Slow Cooker Summer Chicken
Equipment
- 1 6 Qt Slow Cooker
- 1 large skillet if your slow cooker insert is not stovetop safe
Ingredients
For the chicken
- 3-4 boneless skinless chicken breast or use 5-6 boneless thighs
- onion powder to taste
- kosher salt and black pepper to taste
- 1 tablespoon olive oil
Veggies
- 2 ears of corn cut in quarters see post for description
- 1 ½ cups baby carrots, cut in half
- 1 pound baby red potatoes, cut in quarters
- 1 cup red onion, roughly chopped
Sauce
- `1 ¼ cups chicken broth, low sodium I use the better than bouillon chicken base
- 3 tablespoon all-purpose flour
- ½ lemon, juiced, about 2 tbsp
- ¾ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dried parsley
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Additional ingredients
- 2 fresh sprigs rosemary
- 4 fresh sprigs thyme
- lemon slices for serving
Instructions
- Season 3-4 chicken breasts on both sides with salt, pepper, and onion powder. Measure with your heart.
- Heat a large skillet to medium high heat (or if your slow cooker insert is stovetop safe) and add 1 tbsp olive oil. Sear chicken on both sides until golden brown. No need to cook the chicken all the way through, it will finish cooking in the slow cooker.
- Place the prepared veggies in the bottom of the slow cooker. 2 ears of corn cut in quarters, 1 pound baby red potatoes, quartered, 1 ½ cups baby carrots, halved, 1 cup red onion, chopped.
- Make the sauce by combining 1 ¼ cups chicken broth, 3 tbsp flour, ½ lemon, juiced, ¾ tsp garlic powder, ½ tsp onion powder, 1 tsp dried parsley, 1 tsp kosher salt, and ½ teaspoon black pepper. Whisk until mixture is smooth with no lumps from the flour.
- Pour sauce over veggies in the slow cooker and toss to combine. Place seared chicken on top of the veggies then add 2 sprigs fresh rosemary, and 4 sprigs fresh thyme.
- Cover slow cooker and cook on high for 3-4 hours or on low for 7-8, until chicken is cooked through and veggies are tender. Serve with lemon wedges.
Notes
- Fridge: Store leftovers in an airtight container for up to 4 days.
- Reheat: Microwave gently until warmed through or add splash of broth to a saucepan on medium-low heat. Add chicken and veggies and place the lid on. Heat until warmed through.
