Slow Cooker Ultimate Baked Beans

Ultimate baked beans is the perfect potluck side dish but worthy enough to be the main meal. Loaded with beans, smoked turkey sausage, veggies, brown sugar for a touch of sweetness, and a hint of spice from cayenne pepper. It’s hearty and so addicting.

We’ve had this baked beans recipe floating around for many years in our friend group. At least once a year someone makes a big batch to share at one of our gatherings. It’s southern comfort food at it’s best and everyone always loves it.

Aside from this pot of beans being totally delicious it’s also super easy to throw together. The prep is very minimal with just a few veggies to chop and slicing the smoked sausage. Essentially though, all the ingredients go into the slow cooker until party time. If you really want to keep this ultra simple, you can use frozen veggies and throw in a package of Lit’l Smokies for a truly no-fuss recipe.

You can also do this on the stovetop for a faster method. Simply sauté the veggies until tender and add the rest of the ingredients. Simmer for 20-30 minutes and that’s it! However, if you have the extra time the slow cooker results in the best flavor.

Ultimate baked beans can be served year round and will likely become a new tradition.

Ingredients
  

  • 1/2 cup chopped yellow or white onion
  • 1/2 cup chopped bell peppers any color will do
  • 3/4 cup carrots, diced small, about 3 carrots
  • 1 13 oz Hillshire smoked turkey sausage rope, sliced or 1 lb Lit'l smokies
  • 1 28 oz can original bushes baked beans
  • 1 15 oz can black beans, rinsed and drained
  • 1 14.5 oz can green beans, drained
  • 1/4 cup brown sugar
  • 1/2 cup ketchup
  • 1/4 tsp cayenne pepper optional
  • 1 tbsp white vinegar
  • 1 tsp yellow mustard

Instructions
 

Slow cooker method

  • Add all ingredients minus the vinegar and mustard to a slow cooker. Mix well to combine.
  • Cook on low for 8-9 hours or on high for 5-6. When finished cooking add in the vinegar and mustard.

Stovetop method

  • Heat a large Dutch oven or pot to medium heat. Add 1 tablespoon of olive oil and sauté onion, peppers, and carrots until tender, about 5 minutes.
  • Add in the remaining ingredients and stir to combine. Bring to a low boil and let simmer for 20-30 minutes, stirring occasionally.

Notes

Adding the vinegar and mustard after the cooking time helps balance out the sweetness.
 
This recipe serves 8-10 people potluck style.
