How To Make Smoked Sausage and Potatoes

Step One. In a large skillet brown smoked sausage then transfer to a plate. Use the same skillet to sauté onions and garlic, then transfer to the same plate as the sausage.


Step Two. Add potatoes to a large bag with olive oil and seasonings. Give it a good shake to combine. Add the potatoes along with butter to the same skillet used for sausage and onions. Sauté until lightly browned but not cooked through.


Step Three. When the potatoes are lightly browned stir in canned green beans. Transfer potatoes, beans, sausage and onions to a greased casserole dish. Toss to combine and cover tightly with foil.


Step Four. Bake in a 400℉ oven for 40-50 minutes or until potatoes are tender. Add cheese to the top, melt, and serve.

Tips
- Season potatoes well- While the smoked sausage adds lots of flavor, you still need to season the potatoes with plenty of seasoning.
- Don't fully cook the potatoes in the skillet- The time the potatoes spend in the skillet is to only lightly brown and add flavor. You'll want to finish cooking them in the oven with the rest of the ingredients.
- Broil the top for extra browning- Before adding the cheese you can broil the top for a few minutes to add more color and caramelize the top.
Substitutions
- Potatoes- Other potatoes that work well in this recipe are russets (I recommend peeling them first) red potatoes, Yukon gold, or multi colored potatoes.
- Green beans- Fresh green beans are an option with this recipe but you'll want to pre-cook them before adding to the casserole.
- Seasonings- We keep the seasonings really simple and let the smoked sausage flavor shine. Feel free to add additional seasonings you enjoy.

Equipment
- 1 large skillet
- 1 9×13-inch baking dish
Ingredients
- 1 smoked sausage rope, cut in ¼ inch slices
- 1 cup onions, sliced thin
- 2-3 garlic cloves, minced
- 1 ½ pounds baby yellow potatoes, sliced 1 inch thick
- 1 tablespoon olive oil
- 1 ½ teaspoon Creole seasoning
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 2 tablespoon butter
- 2 (14.5) ounce cans whole green beans, drained well
- 1 cup cheddar cheese, shredded
- fresh thyme or parsley to garnish optional
Instructions
Preheat oven to 400℉. Lightly grease a 9×13 casserole dish with cooking spray.
- Heat a large skillet over medium high heat. Add smoked sausage and brown on both sides. Transfer to your lightly greased casserole dish.
- In the same skillet, use the excess fat to sauté onions until golden, about 3-4 minutes, then stir in garlic. Cook garlic until fragrant, about 30-seconds, then transfer onions and garlic to the casserole dish with smoked sausage.
- Meanwhile, add potatoes to a large bag along with olive oil, Creole seasoning, garlic powder, dried thyme, salt and pepper. Seal the bag and shake until potatoes are well coated.
- Melt butter in the same skillet then add seasoned potatoes. Sauté potatoes until lightly browned, about 5-minutes. You don't need to cook them through at this point. Add drained green beans and gently toss with the potatoes, then transfer to the casserole dish.
- Combine all the ingredients in the casserole dish and spread out in an even layer. Cover tightly with foil and place in your preheated oven to bake for 40-50 minutes or until potatoes are fork tender.
- Sprinkle cheese over the top and place back in the oven, uncovered, to melt - about 5-minutes. Garnish with fresh thyme or parsley if desired and serve.
