Who doesn’t love a soft and chewy rice krispie treat? Even better, when it’s smothered in more marshmallow gooeyness, honey graham crackers, and rich chocolate pieces. It’s the ultimate summer treat and fun to serve at BBQ’s, parties, or share as casual dessert with friends.

The great thing about S’mores Rice Krispie Treats is you don’t have to heat up your oven for any kind of baking time. This no-bake dessert only requires a few minutes over the stove to melt the butter and marshmallows.

It’s also the perfect recipe to get your kiddos involved. You can place them in charge of adding the fun S’mores toppings (even though you might catch them sneaking a bite or two) or for the older ones, let them keep an eye on and stir the butter and marshmallow mixture.

Ingredients:

  • Rice Krispie cereal
  • Marshmallows
  • Butter
  • Jet puffed marshmallow fluff
  • Honey graham crackers
  • Hershey’s chocolate bar

The marshmallow fluff is super sticky which is the perfect glue for any toppings you might choose. To drive home the S’mores theme, add a few mini marshmallows to the top along with the graham crackers and chocolate. Add colorful sprinkles for a holiday like the fourth of July. Instead of graham crackers you can substitute with golden grahams cereal. Add other chocolate candies like chopped Reese’s peanut butter cups or M&M’s.

How To Make S’mores Rice Krispie Treats:

Step 1. In a large non-stick pan with high sides melt butter and marshmallows over low heat until smooth, stirring often. Add rice krispie cereal and fold gently with a large spatula until all the cereal is coated well.

Step 2. Transfer the cereal mixture to a 9×13 inch baking dish coated with butter and smooth out in one single layer, using your spatula to press down slightly. Allow to cool for at least 10-minutes.

Step 3. Spread marshmallow fluff over the top of the rice krispie treats like you would frosting. It will be sticky so use butter or non-stick spray on your knife or small spatula to spread in an even layer. Slice into squares, then add a layer of crushed graham crackers and finally chocolate pieces. Slightly press toppings into marshmallow fluff. Slice again using your guided lines and serve!

Storing S’mores Rice Krispie Treats:

While these are best served and eaten the first day, they can still be enjoyed up to 3 days later. Place in a sealed container in a single layer and store at room temperature.

Tips:

  • Grease pan really well- Make sure your pan is greased well to make sure the krispie treats don’t stick. You can also add parchment paper to the bottom for easy removal.
  • Marshmallows and butter– Make sure to melt the butter with the marshmallows low and slow. Once melted removed the pan from the heat otherwise it will begin to harden making it difficult to incorporate with the cereal.
  • Grease hands and spatula– Whether you use your hands or a spatula to press the krispie treats into your pan, make sure to use butter or non-stick spray for easy spreading.
  • Serving- When serving S’mores krispie treats separate the bars in a single layer on a large plate. The top and sides will be very sticky so you won’t want to stack or place the bars to closely together.

Ingredients

  • 3 tbsp butter
  • 40 regular size marshmallows
  • 6 cups rice Krispies cereal
  • 7 ounce container of jet puffed marshmallow cream usually can be found near the marshmallows
  • 1 cup chopped Hershey's chocolate candy bar about 1 1/2 regular size bars
  • 3-4 honey graham crackers broken in small pieces

Instructions

Grease a 9×13 inch dish with butter. You can also add parchment paper for easy removal.

  • In a large non-stick skillet with high sides, melt butter and marshmallows over low heat. Stir often until completely smooth. Remove from the heat and gently stir in cereal using a spatula until well coated. NOTE: If you don't have a pan with high sides, pour the marshmallow mixture over the cereal in a large bowl.
  • Transfer cereal mixture to prepared dish and spread out to form a single layer. Use non-stick spray or butter on your spatula to keep it from sticking. Slightly press down just enough to make a smooth surface. Allow to cool for 10-minutes.
  • Spread the marshmallow fluff over the the krispie treats like you would frosting making sure to spread all the way to the edges. You will also need to grease your knife or spatula to keep the fluff from sticking.
  • Slice into 18 bars or desired size, then top with graham cracker pieces, and chopped chocolate. Slightly press toppings into marshmallow fluff. Slice again using your guided lines and serve!
