This Spinach Tortellini Chicken Soup is the definition of comfort food. It has all the essentials we think of when we want something hearty, filling, and satisfying. It’s what dinner time should feel like.

I love that this meal comes together fast but feels like the kind of soup my mom would have had simmering on the stove all day. The flavor is super savory, the broth is rich and creamy, and seriously each bite has just the right amount of veggie, chicken, and pasta. So good!

Simple Ingredients:

Ingredients for Spinach Tortellini Chicken Soup. Spinach tortellini, chicken broth, cooked chicken, onions, carrots, celery, Garlic, seasonings, butter, olive oil, flour, half and half, parmesan cheese, and parsley.
  • Oil and butter- I like to use a combination of both. The butter adds flavor and the oil will help sautĂ© the veggies.
  • Veggies- Onions, carrots, celery, and garlic. These veggies add extra body and texture to the soup along with flavor.
  • Seasonings- Italian seasoning, dried rosemary, dried thyme, salt, pepper, and bay leaf.
  • Flour- I use all-purpose flour to help thicken the soup.
  • Chicken- I use pre cooked shredded chicken breast. This is a great soup to use leftover chicken or a rotisserie from the grocery store.
  • Chicken stock- You’ll want to use a good quality chicken stock for the best flavor.
  • Tortellini- Use any kind of tortellini you like. I use the spinach and cheese blend from Trader Joes.
  • Half and half- This adds some creaminess without too much heaviness.
  • Parmesan cheese- Adds a rich flavor that melts right into the soup.
  • Parsley- For color and freshness.

Substitutions or Add-Ins:

  • Veggies- Feel free to add other veggies like broccoli, zucchini, mushrooms, baby spinach, or kale.
  • Chicken- If you prefer dark meat, use chicken thigh meat for this recipe. You can also do ground chicken or even ground Italian sausage for a little different flavor.
  • Cream- Heavy cream or even full-fat, unsweetened coconut milk can be used in place of the half and half.

How To Make Spinach Tortellini Chicken Soup:

Step One. In a large soup pot add oil and melt butter. Sauté onions, carrots, and celery until tender. Stir in garlic seasonings and flour.

Step Two. To the veggies add chicken stock, chicken, and bay leaf. Bring to a medium boil and stir in tortellini. Cook until tortellini are tender, then add half and half, parmesan cheese, and parsley. Serve with extra parmesan cheese if desired.

  • đź’ˇDon’t overcook the tortellini. Make sure to follow the manufactures instructions for the cooking times. Every brand is different.
  • đź’ˇBe careful not to curdle the half and half. Make sure heat is turned down to low and the soup is not boiling when you add the half and half. This will prevent the cream from curdling.
  • đź’ˇAdd more chicken stock if your soup is too thick. The soup can thicken as it sits. In this case just add more chicken broth to thin it out.

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small yellow onion, diced
  • 4 medium carrots, peeled and sliced in 1/4 inch slices
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 2 cups shredded cooked chicken breast
  • 6 cups chicken stock
  • 2 bay leaves
  • 10 ounces spinach stuffed tortellini
  • 2/3 cup half and half
  • 1/3 cup grated parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  • Heat a large soup pot to medium heat and add 1 tbsp olive oil and 1 tbsp butter. When butter is melted add onion, carrots, and celery. SautĂ© veggies for 2-3 minutes.
  • Add 2 minced garlic cloves and cook 30-seconds. Stir in 1/4 cup flour, 1 1/2 tsp Italian seasoning, 1/2 tsp rosemary, 1/2 tsp thyme, and 1/2 tsp each salt and pepper. Cook mixture for 1-minute to cook out any raw flour taste, then add 2 cups shredded chicken, 6 cups chicken stock, and 2 bay leaves. Stir and bring to a medium boil, continuing to stir the broth. It should start to look thick.
  • Once liquid is boiling add tortellini and cook according to the manufactures instructions for cooking time. Mine took 4-minutes.
  • When tortellini is cooked, turn the heat down to low and add 1/3 cup parmesan cheese and slowly add 2/3 cup half and half. Stir until cheese is melted and broth is thick and creamy. Add parsley and taste for seasonings. Serve with extra parmesan cheese if desired.
