It is no secret that we love Chex Party Mix around here. I first shared my Sweet and Spicy Fall Chex Mix back in October, and my Oven Baked Chex Party Mix over Christmas. I felt it was only appropriate that I share a spring time Chex Party Mix to celebrate this beautiful season. With Easter just around the corner this is a fun and colorful snack to share and enjoy with others.

Spring Chex Party Mix is perfect for anyone with a sweet tooth but it’s also just a fun (more like addicting) crunchy snack to munch on. I use a combination of rice Chex, honey nut cheerios, and peanuts, then add spring colored candies and pretzels for a festive and inviting snack. You’ll love the sweet buttery sauce that is scented with warm vanilla flavors making this REALLY hard to stop eating. Sorry not sorry.

Ingredients:

  • Rice Chex cereal
  • Honey nut cheerios
  • Roasted and salted peanuts
  • M&M’s chocolate candies
  • Assortment of Easter candies
  • Butter
  • Brown sugar
  • Vanilla extract

Other variations:

  • Corn or wheat Chex
  • Crispix cereal
  • Pretzel sticks
  • Coconut
  • Plain bugles
  • Pecans

For a sweet and spicy version:

If you love sweet and spicy together try adding 1/4-1/2 teaspoon cayenne pepper to the butter mixture.

How To Make Spring Chex Party Mix:

Step 1. Preheat oven to 275℉ and line a large sheet pan with parchment paper.

Step 2. In a large bowl combine Chex mix, cheerios, and peanuts. Set aside.

Step 3. In a small bowl combine melted butter, brown sugar, and vanilla extract until smooth and thick. Pour mixture over Chex mix and toss gently for several minutes to make sure all the ingredients are coated well.

Step 4. Spread mixture evenly on your prepared sheet pan and place in the oven. Bake for 1-hour stirring every 15-minutes. Allow to cool completely and transfer back to the large bowl. Toss in the candies and enjoy!

Storing Spring Chex Party Mix:

Chex Party Mix is great because it has a long shelf life after it is baked. This recipe will keep two weeks or more in an airtight container at room temperature.

Ingredients

  • 6 cups rice Chex cereal
  • 4 cups honey nut cheerios
  • 1 1/2 cups roasted and salted peanuts
  • 1/2 cup melted butter
  • 1/2 cup packed light brown sugar
  • 1 1/2 tbsp vanilla extract yes, tablespoons
  • 1 cup M&M's chocolate Easter candies
  • 1 cups pastel colored candy corn or any fun colored spring candies
  • 1 cup pastel colored coated pretzels, broken in pieces or use regular mini or stick pretzels

Instructions

Preheat oven to 275℉ and line a large sheet pan with parchment paper for easy clean up.

  • In a very large bowl add Chex cereal, cheerios, and peanuts. Toss to combine.

NOTE: If using plain pretzels add them to the Chex mix before tossing in the butter sauce.

  • In a small bowl combine melted butter, brown sugar, and vanilla extract until smooth and thick. Pour mixture over Chex mix and toss gently for several minutes to make sure all the ingredients are coated well.
  • Spread mixture evenly on your prepared sheet pan and place in the oven. Bake for 1-hour tossing every 15-minutes. Allow to cool completely and transfer back to the large bowl. Using a large spoon, toss in the candies and pretzels.

For a spicy version-
If you love sweet and spicy together try adding 1/4-1/2 teaspoon cayenne pepper to the butter mixture.
 
Cool Chex mix completely
Make sure Chex mixture is completely cooled before adding in your candies otherwise the coating from the candy will melt onto the other ingredients.
