How To Make Strawberry Freezer Jam

- Step Five- Stir in vanilla and liquid pectin.

Mom-Inspired Strawberry Freezer Jam
Equipment
- 8 cup food processor
- medium bowl
- 6 ½ pint or 8 ounce wide mouth mason jars with lids, washed and dried
Ingredients
- 2 cups strawberries, mashed or pureed, about 3-4 pints of whole strawberries
- 4 cups granulated sugar
- 3 ounce pouch of Certo liquid fruit pectin see image in post
- 1 teaspoon vanilla extract
- 2 tablespoon bottled lemon juice
Instructions
- Wash and dry strawberries and remove the stems. Cut into quarters and place in a food processor. Pulse berries until you reach your desired consistency. We like our jam less chunky.
- Measure out 2 cups of pureed or mashed strawberries and pour into a bowl if using a processor, then stir in the sugar using a spatula. It's going to seem like a lot of sugar but trust the process. Do not attempt to reduce the sugar for this specific recipe.
- Allow the berry and sugar mixture to sit for 25-minutes stirring occasionally to make the sure the sugar dissolves.
- After the 25-minute time, stir in vanilla extract then add in one, 3 ounce pouch of liquid pectin, making sure to squeeze out all the contents. Stir to combine.
- Switch to a whisk and add the lemon juice. Continue to whisk vigorously for 2-3 minutes. This step is important in activating and properly combining all the ingredients.
- Finally, fill jars ¾ of the way full with strawberry mixture. It's important to leave a little space at the top as the jam will expand in the freezer.
- Use a clean cloth to wipe off any drips and seal the jars with lids. Place on the counter undisturbed for 24 hours. This step is also important to ensure proper set up.
- Freeze jam up to 1 year or place in the refrigerator and enjoy for 3-4 weeks.
