I’m sharing these simple yet delicious Tater Tot Kebobs with Campfire Sauce that are guaranteed to be a hit! Think loaded baked potato only with crispy tater tots as the foundation. We add lots of cheese, bacon, chives, oh yeah, you could easily stop there.
What makes these appetizer tater skewers extra yummy is the smoky campfire sauce. This dipping sauce will definitely raise some brows in a good way.

Simple Ingredients:

- Tater rounds- Or use tater tots.
- Colby Jack cheese- Colby Jack melts nice and creamy.
- Bacon- Make sure bacon is cooked super crispy and chopped fine.
- Chives- Add a fresh touch right before serving. You can also use green onion slices.
- Campfire sauce- Mayo, BBQ sauce, smoked paprika, cayenne pepper, and yellow mustard.
Substitutions:
- The substitutions here might include other cheese blends you enjoy, or if you prefer turkey bacon or no bacon. Serve these kebobs with a variety of dipping sauce like sour cream, ranch, classic ketchup, and of course the campfire sauce.

How To Make Tater Tot Kebobs with Campfire Sauce:

Step One. In a small bowl combine the campfire sauce until smooth. Place in the refrigerator until ready to use.


Step Two. Bake tater rounds in the oven at 425℉ on a large sheet pan until crisp, then skewer 5 or 6 tater rounds on one wooden skewer.


Step Three. Top each skewer with cheese and bacon, then place back in the oven for 3-4 minutes or until cheese is melted. Top with fresh chives and serve with campfire dipping sauce.

- đź’ˇSkewer the tots while they are still warm. Whether you’re using tater rounds like me, or tater tots, make sure to skewer them while the potatoes are still warm. This will make it much easier to thread the potatoes through the wooden sticks.
- đź’ˇKeep kebobs warm in the oven before serving. You can have these assembled on a platter and leave them in the oven at 175℉ to keep warm until you’re ready to serve them.
- đź’ˇSkewer size. To fit 6 tater rounds on one skewer you’re going to want about a 9-inch skewer.

Tater Tot Kebobs with Campfire Sauce
Equipment
- 1 Large sheet pan
- 1 small bowl
Ingredients
Tater Rounds:
- 90 tater rounds or tater tots almost a full 32 ounce bag
- 1 cup shredded Colby Jack cheese
- 4 slices bacon, cooked crisp, and chopped in small pieces
- 2-3 tbsp chopped chives or sliced green onions
- 15 (9") wooden skewers
Campfire Sauce:
- 1/2 cup mayo
- 1/3 cup BBQ sauce I use Stubs
- 1 tsp yellow mustard
- 1/4 tsp smoked paprika
- 1/8 tsp cayenne pepper
Instructions
Preheat oven according to manufactures instructions on the back of the tater round or tater tot bag. Typically 425℉. For easy clean-up line a large sheet pan with parchment paper.
- Bake 90 tater tots on prepared sheet pan in preheated oven according to manufactures instructions, about 15-18 minutes. They should be golden brown and crisp.
- Meanwhile, make the campfire sauce while the tater rounds bake. In a small bowl combine 1/2 cup mayo, 1/3 cup BBQ sauce, 1 tsp yellow mustard, 1/4 tsp smoked paprika, and 1/8 tsp cayenne pepper. Cover and place in the refrigerator until ready to use.
- When tater rounds are fully baked allow them to cool just enough so you can handle them. You'll want to skewer the tater rounds while they are still warm. NOTE: Make sure to leave the oven on.
- Slide 6 tater rounds, from end to end so they lay flat, on one skewer, leaving a tiny bit of space in between each tater round. See post for images. Place the skewers in a single layer on the same sheet pan used to bake the tater rounds, making sure there is still a piece of parchment paper down.
- Sprinkle the top of the skewers evenly with 1 cup of Colby Jack cheese, followed by the 4 slices of cooked chopped bacon. Place back in the oven for 3-4 minutes just until the cheese has melted. Top with 2-3 tbsp of fresh chives and serve with campfire dipping sauce.
