A soft chewy cookie filled with oats, green apple, and rich butterscotch chips. Serve warm out of the oven or pack in a picnic. These are delicious anytime of day.
1granny smith apple peeled and grated, about 1 cup
1 1/2cupsquick oats
1 1/2cupsrolled oats
1cupbutterscotch chips
Instructions
Preheat oven to 375°F
Combine flour, baking soda, salt and cinnamon in small bowl.
Beat butter, granulated sugar, brown sugar, eggs and vanilla in large mixing bowl until creamy. Fold in grated apple.
Slowly incorporate flour until just combined. Stir in oats and butterscotch chips.
Using a small cookie scoop, or rounded tablespoon, drop cookie mixture onto large sheet pan with silicone mat or parchment paper for easy clean-up. Leave 2-inches in-between cookies.
Bake for 7-8 minutes until set in center and edges are slightly golden. For crispier cookies bake 9-10 minutes. Let stand 1 minute before transferring to a cooling rack.
Notes
Substitutions- Replace butterscotch chips with caramel chips, raisins or cinnamon chips.Add-ins- 1/4 cup finely chopped nuts like- walnuts, pecans and almonds can be added in with the oats. Storage- Store in airtight container at room temperature for up to 5 days. Freeze for up to 2 months in airtight bag. Make sure cookies are completely cooled before freezing.
