Apple Oatmeal Scotchies

A soft chewy cookie filled with oats, green apple, and rich butterscotch chips. Serve warm out of the oven or pack in a picnic. These are delicious anytime of day.

Ingredients
  

  • 1 1/4 cups white wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 stick butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1 granny smith apple peeled and grated, about 1 cup
  • 1 1/2 cups quick oats
  • 1 1/2 cups rolled oats
  • 1 cup butterscotch chips

Instructions
 

Preheat oven to 375°F

  • Combine flour, baking soda, salt and cinnamon in small bowl.
  • Beat butter, granulated sugar, brown sugar, eggs and vanilla in large mixing bowl until creamy. Fold in grated apple.
  • Slowly incorporate flour until just combined. Stir in oats and butterscotch chips.
  • Using a small cookie scoop, or rounded tablespoon, drop cookie mixture onto large sheet pan with silicone mat or parchment paper for easy clean-up. Leave 2-inches in-between cookies.
  • Bake for 7-8 minutes until set in center and edges are slightly golden. For crispier cookies bake 9-10 minutes. Let stand 1 minute before transferring to a cooling rack.

Notes

Substitutions- Replace butterscotch chips with caramel chips, raisins or cinnamon chips.
Add-ins- 1/4 cup finely chopped nuts like- walnuts, pecans and almonds can be added in with the oats. 
Storage- Store in airtight container at room temperature for up to 5 days. Freeze for up to 2 months in airtight bag. Make sure cookies are completely cooled before freezing.
