Lemon Poppy-Seed Tea Bread

Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 3/4 cup white wheat flour
  • 5 tbsp sugar, divided
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tbsp poppy-seeds
  • 1 1/2 cups non-fat Greek lemon yogurt
  • 1/2 lemon, juiced
  • 1 tbsp lemon zest
  • 1 tsp pure vanilla extract
  • 1/4 cup butter, melted and cooled slightly
  • 1 egg
  • non-stick cooking spray

Instructions
 

Preheat oven to 350°F. Grease a 1.5 quart loaf pan with non-stick cooking spray.

  • In a medium bowl combine flours, 4 tablespoons sugar, baking powder, baking soda, salt and poppy-seeds.
  • In a large bowl whisk together yogurt, lemon juice, lemon zest, vanilla extract, butter and egg, until well combined.
  • Add flour mixture to the wet ingredients and combine until moistened. The mixture will be thick. Pour and spread evenly into the prepared pan. Sprinkle the top with remaining sugar. Bake 40-45 minutes until golden on top and set in center. Cool at least 30 minutes before cutting.
