Quick Chinese Chicken Salad

This quick and easy Chinese chicken salad is always a hit with friends and family. Shredded chicken, cabbage, toasted almonds, and crunchy ramen noodles with my easy sesame dressing. A perfect summer side or even the main coarse!

Ingredients
  

Salad

  • 3 cups shredded cooked chicken, about 2 chicken breasts
  • 16 ounce bag coleslaw mix, about 4 cups
  • 4 green onions sliced diagonally
  • 1 package ramen noodles broken in small pieces discard seasoning
  • 1/2 cup toasted sliced almonds
  • 2 tbsp toasted sesame seeds

Dressing

  • 1/4 cup sugar can use 2 tablespoons if you like it less sweet
  • 1/2 cup olive oil
  • 1/2 tsp toasted sesame oil
  • 6 tbsp seasoned rice vinegar
  • 1 tbsp low sodium soy sauce
  • 1/4 tsp ground black pepper

Instructions
 

  • Add all the salad ingredients to a large bowl.
  • In a mason jar combine dressing ingredients by shaking well with tight fitted lid.
  • Pour dressing mixture over salad and toss to combine well. Serve right away or make salad ahead and pour on dressing right before serving.
