- 1 1/2 cups red grapes sliced in half
- 1 cup chopped dill pickles
- 3 bacon slices cooked crispy
- 3 hard boiled eggs roughly chopped optional
Dressing
- 1/3 cup non-fat Greek yogurt or all mayo
- 2-3 tbsp mayo
- 1 tsp yellow mustard
- salt and pepper to taste
Additional add-ins -
- Chopped nuts
- Avocado
- Dried fruit
- Cheddar cheese
- Black olives
- Dijon mustard
- Green onion
- Celery
Dressing- This recipe can be made with mayo on it's own but I like to lighten it up by adding in some non-fat plain Greek yogurt. If you don't like mayo at all and want to use yogurt only, use Full-Fat plain Greek yogurt.
Chicken- I like using store-bought rotisserie chicken for convenience but you can also use leftover chicken or roast chicken breasts for this salad.
Storage- Chicken salad will keep in a sealed container for up to 5 days in the refrigerator. If serving at a party don't let it sit out any longer than 2 hours.
