Chicken Salad

Rotisserie chicken with crispy bacon, grapes, pickles and hard boiled eggs. This combo mixed with a simple creamy dressing is absolutely delicious!

Ingredients
  

  • 4 cups shredded chicken I used the breast meat from a store-bought rotisserie chicken
  • 1 1/2 cups red grapes sliced in half
  • 1 cup chopped dill pickles
  • 3 bacon slices cooked crispy
  • 3 hard boiled eggs roughly chopped optional

Dressing

  • 1/3 cup non-fat Greek yogurt or all mayo
  • 2-3 tbsp mayo
  • 1 tsp yellow mustard
  • salt and pepper to taste

Instructions
 

Dressing

  • Mix all the dressing ingredients until smooth and season with salt and pepper. Adjust seasonings to your liking. Place in refrigerator until ready to use.

Chicken salad

  • Add all the ingredients minus the bacon to a large serving bowl. Pour the dressing over the salad and toss to combine. Taste for seasonings and crumble bacon over the top. You can mix the bacon in with the salad or leave it on top.

Dressing- This recipe can be made with mayo on it's own but I like to lighten it up by adding in some non-fat plain Greek yogurt. If you don't like mayo at all and want to use yogurt only, use Full-Fat plain Greek yogurt. 
Chicken- I like using store-bought rotisserie chicken for convenience but you can also use leftover chicken or roast chicken breasts for this salad. 
Storage- Chicken salad will keep in a sealed container for up to 5 days in the refrigerator. If serving at a party don't let it sit out any longer than 2 hours.
