Loaded Cauliflower Casserole

Loaded Cauliflower Casserole is an easy low-carb side dish that's creamy and cheesy and topped with crispy bacon and chives. Perfect for quick weeknight sides, holiday dinners, and even on it's own, it's so good!

Ingredients
  

  • 1 large head of cauliflower, about 4 cups florets cut in small pieces
  • 3 oz light cream cheese
  • 1/2 cup shredded mozzarella cheese
  • 3/4 cup reduced fat Mexican cheese any good melting cheese will work
  • 1 1/2 tsp ranch seasoning mix
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 3 slices bacon cooked crispy and crumbled
  • handful chopped chives or sliced green onion

Instructions
 

Preheat oven to 425°F and prepare a 3 quart casserole dish with non-stick cooking spray

  • Place cauliflower florets in a microwave safe dish with 1/2 cup water and cover with plastic wrap. Cook on high for 10 minutes. Drain liquid and set aside.
  • While cauliflower cooks combine cream cheese, both mozzarella and Mexican cheese, ranch mix, salt and pepper in large mixing bowl.
  • Add hot cauliflower to cheese mixture and gently toss to coat florets. Place in the prepared casserole dish spreading out the cauliflower mixture to the edges.
  • Bake for 10 minutes uncovered. Turn the broiler on high and move casserole to the top rack. Broil for 1-2 minutes until golden in spots.
  • Remove from heat and sprinkle with bacon and chives or green onions. Serve right away!
