Skillet Taco Mac

- 1 lb lean ground beef or turkey
- 1 10 oz can Ro-Tel diced tomatoes & green chilis, undrained
- 1 cup chicken broth I use better than bullion roasted chicken base for best flavor
- 1 cup 1% or 2% milk
- 1 cup crushed fire roasted tomatoes can substitute for tomato sauce
- 1 cup fire roasted corn, canned or frozen
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 1/2 cups large elbow macaroni noodles or any smaller shaped pasta of choice
- 1 cup reduced fat Mexican cheese blend, plus more for topping
- fresh chopped cilantro optional
In a large pot or skillet with fitted lid, cook ground meat on medium heat until no longer pink. Drain off any excess grease.
Add Ro-Tel, crushed tomatoes, corn, spices, broth and milk. Stir and turn heat up to medium high.
Once boiling, stir in macaroni and place the lid on. Turn heat down to low and cook for 10 minutes stirring 1 or 2 times until pasta is cooked.
Remove from heat and stir in cheese and cilantro. The mixture will continue to thicken as it sets. Add more cheese to the top if desired and serve!

Short-Cut:
Use 1 packet of your favorite taco seasoning for an even faster meal prep. If using pre packaged taco seasoning do not add salt and pepper to the recipe.
Pasta & Veggies:
I like using the larger size macaroni because it holds more sauce on the inside of the pasta, but you can use whatever small shaped pasta you like. You can also add other veggies like, bell peppers, zucchini, mushrooms and onions. Sauté them with the ground meat.
