Island Slow Cooker Chicken
This simple 3-ingrediant Island Slow Cooker Chicken is a meal the whole family will love. Store-bought mango pineapple salsa, and just a few spices, turns this chicken into a super flavorful dish. It's versatile and the leftovers are just as good!

- 1 1/2 lb boneless skinless chicken thighs and/or breasts I use about 5-6 medium chicken thighs
- 12 oz jar mango pineapple salsa I use island salsa from Trader Joe's
- 1/4 tsp garlic powder
- 1/4 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp water
Add half of the salsa to the bottom of the slow cooker and spread evenly. Mix spices together in a small dish. Place chicken on top of salsa and sprinkle with seasoning. Add the remaining salsa on top of chicken and add 2 tablespoons of water.
Cover and cook on high for 5 hours or on low for 7-8.
4-Ways To Serve Slow Cooker Chicken-
- Over rice- any kind of rice, quinoa, or couscous is great.
- Tacos- shred chicken and use in soft or crunchy tacos (this is my favorite).
- Quesadillas- shred chicken and add cheese and rice between 2 tortillas (this is my daughters favorite).
- Over potatoes- mashed potatoes, sweet or russet, both are delicious.
