Easy Pork Chops with Herb Butter

Perfectly seared pork chops, drizzled with a simple herb butter, is easy enough for a busy weeknight, and elegant enough for a weekend dinner party.

Ingredients
  

  • 4 boneless or bone-in pork chops
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • salt and pepper to taste

Herb Butter

  • 4 tbsp melted salted butter
  • 1 tsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh, flat leaf Italian parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped

Instructions
 

Herb Butter

  • Melt butter in microwave or on stove top. Add chopped herbs and stir to combine. Set aside.

Pork Chops

  • Heat a large heavy bottom skillet with fitted lid to medium high and add olive oil. Season pork chops on both sides with garlic powder ,salt and pepper. NOTE: Because you're using salted butter for the herb butter ,don't over salt the pork chops. Place pork chops in hot pan and sear on the first side for 5 minutes. Flip pork chops and put the lid on for another 5 minutes. Remove lid and put one spoon full of herb butter on top of each pork chop. Turn heat down to medium low, put the lid back on and cook for another 5 minutes. You want to be careful not to overcook your pork chops. To double check doneness ,use a meat thermometer and make sure it registers 135 F.
