- 6 boneless pork loin chops (1-1/2 inch thick) Can use 4 large bone-in pork loin chops
- 1/2 cup store-brand or homemade barbecue sauce
- 1/2 cup pure maple syrup or pancake syrup
- 2 chipotle peppers in adobo sauce, seeded and minced
- 1 tsp adobo sauce from the can
- salt and pepper
Preheat indoor grill pan or outdoor grill to medium heat.
Season pork chops evenly with salt and pepper on both sides.
Combine barbecue sauce, maple syrup, chipotle peppers, and adobo sauce in small bowl.
Place pork chops on hot grill and cook for 20-25 minutes turning once half way through. Pork is cooked when temperature reaches 145°F.
Baste half of the sauce on each pork chop the last 5-minutes of cooking time.
Let rest on plate for 5 minutes. Serve with extra sauce.
Skillet method:
Follow instructions for sauce and seasoning pork chops.
Heat a large skillet to medium high heat and add 2 tablespoons of olive oil.
When oil is hot and just starting to ripple, add pork chops. For 1/2-1 inch thick pork chops, sear for 4-5 minutes per side or until internal temperature reaches 145℉.
Once cooked, brush with half of the sauce. Remove from the heat, cover, and let rest for 5-minutes. Serve with extra sauce.
Tips:
Other meat options- Chicken, salmon, and shrimp are great options if you don't like pork.
Resting meat- It's important to rest the meat for 5-10 minutes after the cooking time. This will give it time to redistribute the juices so the meat isn't dry.
