  • 1 tsp adobo sauce from the can
  • salt and pepper

Instructions

Preheat indoor grill pan or outdoor grill to medium heat.

  • Season pork chops evenly with salt and pepper on both sides.
  • Combine barbecue sauce, maple syrup, chipotle peppers, and adobo sauce in small bowl.
  • Place pork chops on hot grill and cook for 20-25 minutes turning once half way through. Pork is cooked when temperature reaches 145°F.

  • When oil is hot and just starting to ripple, add pork chops. For 1/2-1 inch thick pork chops, sear for 4-5 minutes per side or until internal temperature reaches 145℉.
  • Once cooked, brush with half of the sauce. Remove from the heat, cover, and let rest for 5-minutes. Serve with extra sauce.

Notes

Tips:
Other meat options- Chicken, salmon, and shrimp are great options if you don't like pork.
Resting meat- It's important to rest the meat for 5-10 minutes after the cooking time. This will give it time to redistribute the juices so the meat isn't dry.
