Kitchen Sink Blondies

Everything but the Kitchen Sink Blondies. Lots of goodies from sweet chocolate and butterscotch chips, to salty pretzels, rice krispies, and gooey marshmallows. These will go fast!

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1 cup firmly packed light brown sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup butterscotch chips
  • 1/2 cup broken pretzels
  • 1/2 cup rice krispies cereal
  • 1 cup mini marshmallows

Instructions
 

Preheat oven to 350°F and grease a 9×13-inch baking dish with butter or non-stick cooking spray

  • In a small bowl mix flour, salt and baking soda. Set aside.
  • In a large bowl or stand mixer, cream together butter and brown sugar. Add eggs and vanilla extract and beat well. Add the flour mixture in thirds, mixing well each time.
  • Using a large spoon, fold in baking chips, then crushed pretzels, and finally rice krispies. The batter will be thick.
  • Transfer brownie batter to prepared baking dish. Use the back of a spoon or clean hands (see tips below) to press down and spread out evenly. Top with mini marshmallows and slightly press each one into the batter. This is also a good time to add a few extra pretzels or other toppings you'd like to showcase.
  • Bake in preheated oven for 20-25 minutes. The top should be golden brown and the edges slightly crisp. Let cool at least 15-minutes before cutting into squares.

Notes

Tips:
  1. Don’t overmix the batter- Overmixing the batter can cause the blondies to be dense and not rise. Plus, you don’t want to crush the cereal too much.
  2. Grease hands before pressing into the pan- The batter is thick and sticky so having slick fingers will help spread the mixture evenly.
  3. Add a few mix-ins to the top of the blondie batter– In addition to the marshmallows, I like to add a few more broken pieces of pretzels. It looks fun and adds more crunch.
Additional add-ins:
  • Cereal– Lightly crushed corn flakes or corn chex. Cocoa krispies, or honey bunches of oats.
  • Nuts– Use finely chopped pecans, almonds or walnuts. 1/4-1/2 cup
  • Potato chips– Gently crumble plain potato chips over the top of the blondie just before baking.
  • Baking chips– Use a combination of white chocolate, semi-sweet, and peanut butter chips.
  • Coconut- Use sweetened or unsweetened shredded coconut. 1/4-1/2 cup
