Quick and Easy Honey Vanilla Granola
This simple granola can be made in under 20 minutes. Toasted oats, lightly sweetened and only 6 ingredients.

- 1 1/2 cups quick or rolled oats
- 1/3 cup almond flour substitute finely chopped nuts (almonds, walnuts, pecans)
- 2 tbsp honey
- 2 tbsp butter or coconut oil, melted
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
Heat oven to 350 degrees F
In medium size mixing bowl add the oats, almond flour or nuts and cinnamon. Set aside.
In a small bowl combine the honey, melted butter or coconut oil, and vanilla extract.
Add the honey mixture to the oat mixture and stir to combine. On a large sheet pan with parchment paper spread the granola evenly. Bake for 8 minutes. Sir the mixture and spread evenly again. Bake another 7 minutes until golden brown. It will burn quickly so make sure to watch it.
I substituted the nuts in this recipe for almond flour because my daughter isn't big on nuts. It still gives it that nutty flavor without the texture.
If you like granola a little sweeter, add an extra tablespoon of honey to the melted butter.
