If you’re looking for a fun recipe to make using your garden zucchini, these Zucchini Parmesan Bites will become a fast favorite. Think crispy zucchini fries only better and easier to make. The fresh herbs really set these bites apart and the crunchy exterior makes them fun to eat.
While these might look like a fancy snack, make no mistake, if you know how to shape a ball, that’s all the skills you need!

Simple Ingredients:
- Zucchini– Use fresh zucchini for this recipe.
- Garlic– I like to grate my garlic so there are not any chunks.
- Panko crumbs– This gives it a super crispy exterior.
- Parmesan cheese– Grated parmesan will give it the best flavor.
- Egg– This will help bind the ingredients together.
- Herbs and seasonings– Fresh parsley, chives, basil, dried oregano, red pepper flakes, and kosher salt.
- Marinara or pasta sauce– For dipping the zucchini bites.
Substitutions:
- Garlic– If you don’t have fresh garlic you can use garlic powder to taste.
- Panko crumbs– Plain or seasoned bread crumbs can be substituted for the panko crumbs.
- Herbs and seasonings- This is where all the flavor is and it’s fun to experiment with other seasonings and herbs.
How To Make Zucchini Parmesan Bites:

Step One. Heat oven to 425℉. Line a sheet pan with parchment paper and spray with non-stick cooking spray.
Step Two. Add all of the ingredients minus the marinara to a medium size bowl and combine well.
Step Three. Use a small cookie scoop or tablespoon to scoop mixture. Gently roll in the palm of your hands, then roll lightly in additional panko crumbs.
Step Four. Place rolled balls on prepared sheet pan and bake in preheated oven for 15-20 minutes turning once half way through. They should be golden on the outside and tender in the center. Serve with marinara for dipping.
Recipe Tips:
- Zucchini liquid- Place shredded zucchini in a clean tea towel and squeeze out as much liquid as possible.
- Extra crispiness– If you want these extra crispy, place under the broiler for 30-seconds after they are done baking.
- Make ahead- Assemble ahead of time and keep them in the refrigerator until ready to bake.
Common Questions-
For this recipe I would only use fresh. Previously frozen zucchini is going to retain extra moisture that could effect the outcome of these parmesan bites.
Yes! Place cooled leftovers in the refrigerator in a sealed container. When ready to reheat you can do so in an air fryer or the oven at 350℉ for 5-8 minutes.
I have not tested this but I know others that have done this and it’s worked out okay. It’s best to eat them fresh.

- 1 cup shredded zucchini, squeeze out excess liquid see recipe notes
- 1 garlic clove, grated
- 2/3 cup panko crumbs, divided
- 1/4 cup grated parmesan cheese
- 1 large egg
- 2 tbsp fresh chives, chopped
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh basil, chopped
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes
- 1/4 tsp kosher salt
- marinara for dipping
