Creamy Lemony Ranch Dip

Creamy Lemony ranch dip is a nice change from the traditional ranch dip we all know and love. Bursting with flavor and so creamy, this will not last long at the snack table.

Ingredients
  

  • 1/2 cup mayo
  • 1/2 cup plain non-fat Greek yogurt
  • 1 tbsp shallot, minced super fine
  • 2 tbsp flat leaf parsley, chopped fine
  • 1/2 lemon zested and juiced
  • 1 tbsp ranch seasoning mix such as Nalley's
  • 1/4 tsp ground black pepper

Instructions
 

  • Mix all ingredients in medium size bowl until well combined and creamy. Chill until ready to serve.

Veggies to serve with dip

  • Blanched green beans
  • Blanched asparagus spears, ends trimmed
  • Sliced English cucumbers
  • Cherry tomatoes
  • Sliced zucchini

Notes

Blanching vegetables- Set a large bowl with water and ice near the stove. Fill a large pot with water and bring to a boil. Add vegetables, bring back to a boil and cook for 1 minute. Drain and add immediately to ice water bath. Let set for 3-5 minutes. Drain and pat dry. Vegetables that work well for this cooking time-
  1. Fresh, thin green beans
  2. Fresh thin asparagus spears, ends trimmed off by 2 inches
  3. Fresh broccoli florets
