Berry Salad with Poppy Seed Dressing

A simple salad of greens, fresh strawberries, blueberries, creamy feta cheese, and the most delicious poppy seed dressing. Berry Salad with Poppy Seed Dressing is the perfect summer salad everyone will enjoy.

Ingredients
  

  • 4-5 cups baby spinach or spring mix
  • 2 cups fresh strawberries, sliced thin
  • 1 cup fresh blueberries
  • 1/2 cup feta cheese crumbles optional

Dressing

  • 1/4 cup avocado or olive oil
  • 2 tbsp apple cider vinegar rice vinegar or white wine vinegar work as well
  • 2 tbsp honey
  • 1 tbsp toasted sesame seeds
  • 1/2 tbsp poppy seeds
  • 1 tsp minced red onion
  • 1/4 tsp Worcestershire
  • 1/4 tsp paprika
  • 1/2 tsp ground black pepper

Instructions
 

Make dressing

  • Add all dressing ingredients to a mason jar with fitted lid and shake well. Set aside or refrigerate until ready to dress the salad.

Assemble salad

  • Lay out spinach or lettuce greens in a wide bowl or large platter. Top salad with strawberries, blueberries and feta cheese if using. If serving right away drizzle dressing over salad and toss gently. You may not need to use all of the dressing.

Notes

Tips:
Assembling the salad- If you're taking this to a party or BBQ, leave off the dressing until just before serving. That way the spinach leaves don't wilt before your guests get to enjoy it.

  • Raspberries
  • Blackberries
  • Grapes
  • Kiwi
  • Peaches
  • Nectarines
If you don't like feta cheese- Use shaved parmesan or mozzarella pearls in place of feta cheese. Or leave off the cheese for a dairy free salad.
