Italian Ground Turkey and Sweet Potato Skillet
This easy one-skillet 30-minute meal has everything you need for a healthy, filling, and delicious dinner. Lots of protein, fiber, and flavor! A weeknight favorite my family loves!

- 3 tbsp olive oil, divided
- 1 medium sweet potato, peeled and cut in 1/2-inch cubes
- 1 lb lean ground turkey
- 1/2 cup chopped yellow onion
- 1 garlic clove, minced
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 (15oz) can northern or cannellini white beans, drained and rinsed
- 1/2 cup chicken stock
- 1 cup marinara sauce, divided
- 1/4 cup chopped, fresh Italian parsley
- 1/4 cup chopped, fresh basil
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
Heat 2 tbsp of olive oil in a large skillet over medium high heat. Add sweet potatoes and cook 5-8 minutes, stirring often, until golden. Potatoes won't be cooked all the way at this point. Transfer to a plate. Add remaining 1 tbsp olive oil to the skillet and cook ground turkey and onion until turkey is no longer pink, about 5-minutes. Add garlic and cook 1-minute.
Add sweet potatoes back to skillet along with seasonings, beans, chicken stock, 1/2 cup marinara, parsley and basil. Stir to combine. Reduce heat to medium low and cook another 7-10 minutes or until potatoes are fork tender, stirring occasionally.
When potatoes are cooked, sprinkle the top with mozzarella and parmesan cheese and drizzle with remaining 1/2 cup marinara sauce. Serve immediately.
Tips:
- Meat- Use ground beef, chicken or Italian sausage instead of turkey.
- Potatoes- Swap out the sweet potatoes for russets, Yukon gold, or red potatoes.
- Marinara- Use your favorite marinara or pasta sauce.
- Cooking sweet potatoes- Sweet potatoes can take a bit to cook especially if they're cut on the larger size. Use a lid the last 10-minutes of the cooking time to trap the heat and cook the potatoes faster.
- Seasonings- Use other seasonings like cumin and chili powder for a taco flavor, or thyme and rosemary for an earthy flavor.
- Veggies- Add other veggies like chopped spinach, diced zucchini, or a frozen veggie blend.
