This Slow Cooker Low-Carb Beef Chili with Beans is a perfect meal to satisfy your cozy cravings. I use ground beef and sirloin steak bites for big beefy flavor. For low-carb friendly, black soy beans offer a great substitute for traditional style beans, and you won't even know the difference!
1poundsirloin steak, cooked or uncooked, cut into small 1/2 inch cubessee recipe notes for additional information
1 (28)ouncecan diced tomatoes with green chiliessuch at mild Rotel
1 (15)ouncecan black soy beans, rinsed and drained (low-carb option)or use regular black or kidney beans
1cupbeef broth
Instructions
Heat a skillet to medium-high heat and add olive oil, onions, and garlic. Cook for 2-3 minutes stirring often, making sure garlic doesn't get too brown. Add ground beef and cook until no longer pink, about 5-7 minutes. Remove any excess grease. Add tomato paste and seasonings to the ground beef and cook another 1-2 minutes.
To the slow cooker add the cooked ground beef, sirloin cubes, diced tomatoes and chilies, beans, and broth. Stir to combine and set slow cooker to low for 8-10 hours, or high for 5-6. Chili is done when beef tips are tender and soft.
Serve with all your favorite chili toppings.

Tips:Beef options for slow cooker chili- Sirloin is an inexpensive cut of of meat and will also maintain its shape. Other cuts of meat that work well in chili are stew meat, brisket, tri-tip, and short ribs. And when slow cooked for several hours the meat becomes soft and tender. Chili is also a great recipe to use up leftover roast or steak from a previous meal, which is what I did for this recipe!If you're starting with raw meat such as sirloin steak, stew meat, etc, I would suggest a cooking temperature set to low for the most tender results.Nutritional facts do not include toppings.
