I realized after all this time that I didn’t have a good beef chili recipe on my website. I’ve got my turkey chili with pumpkin, my chicken chili, and my green chili chicken enchilada soup. All delicious by the way, but sometimes we love a good old fashion beef chili.

Meet my Slow Cooker Low Carb Beef Chili with Beans. When I say this chili is loaded with beef, it’s literally a meat lovers dream. I use ground beef and sirloin steak bites which give it a hearty and meaty texture. And for those that love beans in chili but might be watching their carbohydrates, I’ve got you covered! Black soy beans are the perfect swap for other starchy, high carb beans, yet still have a creamy bean like texture.

Let’s talk Low Carb Beans:

Beans, Beans, the Musical Fruit! šŸ˜‹ I searched the internet for low-carb bean substitutes and I wasn’t coming up with a whole lot that looked appealing. Green beans, butter beans, and edamame, are three low-carb beans that can be incorporated in a low-carb diet, but that sounded terrible in chili. I even ran it by my best friend and she was like, nope!

After searching high and low I finally came across an article that recommended black soy beans as a low-carb option. I had never tired these before but I was very intrigued when they mentioned how similar they were to traditional black beans. And with less than half the amount of carbs, I had to give these a try! Well, I’m here to tell you they are the perfect substitute! The texture and flavor is very similar to regular black beans, and they hold up so well in soups, stews, and this Low-Carb Beef Chili.

Black soy beans can be found here. Or if you have a Natural Grocers or health food store in your area, you can purchase them at a much lower price.



Ingredients For Slow Cooker Beef Chili with Beans:

  • Olive oil
  • Yellow onion
  • Garlic cloves
  • Ground beef
  • Sirloin steak or stew meat (leftover or uncooked)
  • Chili powder
  • Cumin
  • Smoked paprika
  • Oregano
  • Salt and pepper
  • Tomato paste
  • Canned tomatoes with green chilies
  • Canned black soy beans (or regular black beans)
  • Beef broth

What cuts of beef are good for Chili?

I like the combination of ground beef and a heartier meat like sirloin steak tips. Sirloin is an inexpensive cut of meat and will also maintain its shape. Other cuts of meat that work well in chili are stew meat, brisket, tri-tip, and short ribs. And when slow cooked for several hours the meat becomes soft and tender. Chili is also a great recipe to use up leftover roast or steak from a previous meal, which is what I did for this recipe!

Note: If you’re starting with raw meat such as sirloin steak, stew meat, etc, I would suggest a cooking temperature set to low for the most tender results.

Step By Step Instructions For Slow Cooker Beef Chili:

Step 1. In a medium skillet cook the onions and the garlic in olive oil for a few minutes until soften. Add ground beef and cook until no longer pink. Remove any excess grease. Add tomato paste and seasonings to the ground beef and cook another few minutes.

Step 2. To the slow cooker add the ground beef, beef tips (leftover or uncooked) tomatoes and green chilies, beans, and beef broth. Stir to combine. Cook on high for 5-6 hours, or low for 8-10.



My family loves this low-carb chili so much. It’s filling and will make great leftovers, or freeze for another easy meal!

Serving Slow Cooker Chili:

Set out all your favorite chili toppings like shredded cheese, sour cream, fresh avocado, and green onion. And for those that are not concerned about carbs, make a batch of corn bread or set out crispy tortilla chips. Yum!

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 3 tbsp chili powder
  • 1 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 2 tbsp tomato paste
  • 1 pound sirloin steak, cooked or uncooked, cut into small 1/2 inch cubes see recipe notes for additional information
  • 1 (28) ounce can diced tomatoes with green chilies such at mild Rotel
  • 1 (15) ounce can black soy beans, rinsed and drained (low-carb option) or use regular black or kidney beans
  • 1 cup beef broth

Instructions

  • Heat a skillet to medium-high heat and add olive oil, onions, and garlic. Cook for 2-3 minutes stirring often, making sure garlic doesn't get too brown. Add ground beef and cook until no longer pink, about 5-7 minutes. Remove any excess grease. Add tomato paste and seasonings to the ground beef and cook another 1-2 minutes.
  • To the slow cooker add the cooked ground beef, sirloin cubes, diced tomatoes and chilies, beans, and broth. Stir to combine and set slow cooker to low for 8-10 hours, or high for 5-6. Chili is done when beef tips are tender and soft.
  • Serve with all your favorite chili toppings.
