- 1 tbsp olive oil
- 1 small yellow onion, diced small
- 2 celery sticks, diced small
- 1 garlic clove, minced
- 1 pound lean ground beef
- 2 tbsp tomato paste
- 1 (28) ounce can fire roasted crushed tomatoes
- 1 tbsp brown sugar
- 1 tsp Worcestershire sauce
- 1 tsp Italian seasoning
- 4 cups beef broth
- 2 large russet potatoes, peeled and cut in 1-inch cubes
- 1 (14.5) ounce can green beans, drained
- 2 cups frozen peas and carrots
- 1/4 cup fresh chopped parsley
- salt and pepper to taste
In a large soup pot heat olive oil over medium heat. Add onions and celery. Cook 2-3 minutes just until softened. Stir in garlic and cook another 1 minute.
Add ground beef to the veggies and cook breaking into crumbles until no longer pink, about 5-7 minutes. Remove any excess grease. Stir in tomato paste and cook another 1-minute. Toasting the tomato paste adds a lot of flavor.
To the ground beef add crushed tomatoes, brown sugar, Worcestershire sauce, Italian seasoning, beef broth, and potatoes. Stir to combine and bring to a medium boil. Cook 12-15 minutes until potatoes are tender.
Once potatoes are cooked turn the heat down to low and stir in green beans, frozen peas and carrots, and parsley. Season to taste with salt and pepper and serve!

Ground beef substitute-
While ground beef is the traditional ground meat used for hamburger soup, ground turkey and even Italian sausage would work well. I would still recommend using beef broth for a rich beefy flavor.
Freezing hamburger soup-
Make sure to cool the soup completely then place in freezer safe containers. Soup can be kept in the freezer for up to 6 months.
