Slow Cooker Chicken Burrito Bowls

Slow Cooker Chicken Burrito Bowls is great for busy weeknights. You only need four simple ingredients, and less than 5-minutes to dump it all in the slow cooker. This chicken is saucy and flavorful, and is the perfect foundation for burrito bowls, tacos, nachos, and more!

Ingredients
  

  • 2 large boneless skinless chicken breasts or use boneless skinless chicken thighs, about 1.5 pounds
  • 1/2 packet low-sodium taco seasoning or use 2 tablespoons of homemade
  • 16 ounce container mild salsa your favorite brand or use 1 1/2 cups homemade
  • 1/4 cup prepared ranch dressing your favorite store brand or homemade

Additional ingredients for building burrito bowls:

  • cooked rice
  • black beans
  • corn
  • cheese
  • avocado
  • sour cream
  • cilantro
  • Queso

Instructions
 

  • Lay the chicken in a 4 Qt or larger slow cooker. Sprinkle taco seasoning over the top of chicken. No need to coat both sides. Dump the salsa in followed by the ranch dressing. It is not necessary to stir it together but you definitely can.
  • Place the lid on and cook on low for 6-7 hours or on high for 4-5. Once chicken easily falls apart, take two forks and shred right in the slow cooker. Mix together with the sauce and it's ready to build burrito bowls.

How to build the best burrito bowl:

  • Add a generous scoop of rice to a medium size bowl.
  • Next add chicken and some of the sauce that it cooked in. Don’t forget the sauce!
  • Finish with additional toppings like beans, corn, cheese, fresh avocado, cilantro, sour cream, etc..

Freezing slow cooker chicken-
This freezes particularly well because it has a sauce so the chicken won't dry out. Add the shredded chicken and the sauce to a freezer safe bag. Remove the air then seal. Use your hands to smooth out the mixture in one single layer so it lays nice and flat in the freezer. This will also help it to thaw much quicker.
