You know we love our slow cooker meals around here and Slow Cooker Chicken Burrito Bowls is another fantastic recipe we will be making often. The chicken for these bowls is incredibly flavorful and has the best creamy, taco flavored sauce that is awesome over rice. This chicken is perfect for making bowls but you could also make tacos, enchiladas, taco salad, quesadillas; so many great options!
My favorite thing about meals like this is it lends some pretty great leftovers. You could use the extra chicken for a flavorful Mexican soup or even my green chili enchilada skillet. This would even be a great recipe to make over the weekend specifically for easy meal prep during the week.
Ingredients For Slow Cooker Chicken Burrito Bowls:
- Large boneless skinless chicken breasts (or chicken thighs)
- Low sodium taco seasoning (or homemade)
- Mild salsa
- Ranch dressing
Additional Ingredients For Building Chicken Bowls:
- Rice
- Black beans
- Corn
- Cheese
- Avocado
- Sour cream
- Cilantro
- Queso
How to make Slow Cooker Chicken Burrito Bowls:
Step 1. Add your chicken to a 4 Qt or larger slow cooker, sprinkle with taco seasoning, then add your container of salsa, and last top it off with ranch dressing. You don’t even need to stir. Cook on low for 5-7 hours depending on how big your chicken is.
Step 2. .Once the chicken is tender, shred with two forks right in the slow cooker and prepare your burrito bowl toppings! So easy!

The best part about burrito bowls is the toppings are seriously endless. Equally the hardest part about burrito bowls is knowing when to call it good so you don’t overfill your bowl. 😉
- Add a generous spoonful of cooked rice.
- Next add chicken and some of the sauce that it cooked in. Don’t forget the sauce!
- Finish with additional toppings like beans, corn, cheese, fresh avocado, cilantro, sour cream, Queso, etc..
Can I Freeze Slow Cooker Chicken Burrito Bowls?
Definitely! This freezes particularly well because it has a sauce so the chicken won’t dry out. Add the shredded chicken and the sauce to a freezer safe bag. Remove the air then seal. Use your hands to smooth out the mixture in one single layer so it lays nice and flat in the freezer. This will also help it to thaw much quicker.
Can I make This Low Carb?
Yes! The chicken itself has only 7 net carbs per serving. For low-carb bowls, use cauliflower rice instead, along with black soy beans for a lower-carb bean option.

Slow Cooker Chicken Burrito Bowls
Ingredients
- 2 large boneless skinless chicken breasts or use boneless skinless chicken thighs, about 1.5 pounds
- 1/2 packet low-sodium taco seasoning or use 2 tablespoons of homemade
- 16 ounce container mild salsa your favorite brand or use 1 1/2 cups homemade
- 1/4 cup prepared ranch dressing your favorite store brand or homemade
Additional ingredients for building burrito bowls:
- cooked rice
- black beans
- corn
- cheese
- avocado
- sour cream
- cilantro
- Queso
Instructions
- Lay the chicken in a 4 Qt or larger slow cooker. Sprinkle taco seasoning over the top of chicken. No need to coat both sides. Dump the salsa in followed by the ranch dressing. It is not necessary to stir it together but you definitely can.
- Place the lid on and cook on low for 6-7 hours or on high for 4-5. Once chicken easily falls apart, take two forks and shred right in the slow cooker. Mix together with the sauce and it's ready to build burrito bowls.
