(Viral) Nana's Crunchy Lemon Parmesan Salad

This simple 4-ingredient Crunchy Lemon Parmesan Salad will be a new favorite when you want something fresh and easy to make. Each bite is bursting with lemon flavor and salty parmesan cheese. A salad perfect for a quick lunch or side for dinner.

Ingredients
  

  • 3-4 Romaine hearts, chopped
  • 1/4 cup extra virgin olive oil
  • 1 cup freshly grated parmesan cheese use real parmesan Reggiano for the best flavor
  • 2-3 lemons juiced, or to taste
  • salt and pepper to taste

Instructions
 

  • Add chopped Romaine to a large salad bowl and toss with olive oil. Squeeze lemons over the the lettuce and toss again. Finally add parmesan cheese and toss one more time. Season to taste with salt and pepper and serve.

Tips:
Make it a meal-
Add protein like grilled chicken for a complete meal. This salad is also great in a turkey wrap or stuff in a pita sandwich with your favorite lunch meat like roasted turkey. 
Leftovers- 
Don't throw away the leftovers! This salad is still great the next day unless you overdress the greens with lemon juice. I love to take the extras to work with shaved lunch meat or roasted chicken. So yummy!
