While this recipe might be more appealing in the spring and summer, I’ve been enjoying it all winter long. You can always find parmesan and lemons so I figure why wait until the weather gets warmer to share this awesome fresh salad with you. Plus, the bright flavors will add a little sunshine to your day!

I first discovered this viral salad from Erin O’brien, a creator and food blogger on Instagram. She calls it Nana’s Crunchy Lemon Parmesan Salad. It looked so fresh and easy and I love the flavors of lemon and parmesan together. I knew this salad would be good but I did not expect to be hovering over the salad bowl with my fork and zero willpower to stop. This is truly a deliciously simple salad you will come back to time and time again. It’s that good!

4-Simple Ingredients:

  • Romaine lettuce
  • Olive oil
  • Fresh lemon juice
  • Parmesan cheese
  • Salt and pepper to taste (doesn’t count as an ingredient😉)


Make it a meal!

This salad is so quick and easy to throw together and I almost always have these ingredients on hand. It makes a great side dish with just about anything, but I also love adding it to my turkey wraps, or simply toss in roasted chicken for a healthy lunch.

Don’t throw away the leftovers:

You won’t believe this when I tell you but if you have leftovers, this lemon parmesan salad is still delicious and has a nice crunch the next day. Store in a sealed container in the refrigerator and enjoy a second day with some protein like roasted chicken or salmon.

How To Make Nana’s Crunchy Lemony Parmesan Salad:

  1. Add chopped Romaine lettuce to a large bowl and toss with olive oil. Add lemon juice and toss again, then finally the grated parmesan cheese. Toss one more time and season with salt and pepper if you like and serve!

Ingredients
  

  • 3-4 Romaine hearts, chopped
  • 1/4 cup extra virgin olive oil
  • 1 cup freshly grated parmesan cheese use real parmesan Reggiano for the best flavor
  • 2-3 lemons juiced, or to taste
  • salt and pepper to taste

Instructions
 

  • Add chopped Romaine to a large salad bowl and toss with olive oil. Squeeze lemons over the the lettuce and toss again. Finally add parmesan cheese and toss one more time. Season to taste with salt and pepper and serve.

Notes

Tips:
Make it a meal-
Add protein like grilled chicken for a complete meal. This salad is also great in a turkey wrap or stuff in a pita sandwich with your favorite lunch meat like roasted turkey. 
Leftovers- 
Don’t throw away the leftovers! This salad is still great the next day unless you overdress the greens with lemon juice. I love to take the extras to work with shaved lunch meat or roasted chicken. So yummy!
