- 1 (32) oz pkg. frozen hash browns, thawed
- 3/4 cup melted butter, divided
- 1 (10) oz can cream of chicken, undiluted
- 1 cup sour cream
- 1 1/2 tsp seasoned salt
- 1/2 tsp ground black pepper
- 2 cups shredded sharp cheddar cheese
- 1 small yellow onion, diced fine
- 2 cups crushed plain corn flakes or panko crumbs, plain bread crumbs, or crushed butter crackers
Heat oven to 350℉ and spray a 2 qt baking dish with non-stick cooking spray.
Crush corn flakes in a large Ziploc bag. Add 1/4 cup melted butter and toss to combine. Set aside.
(Optional) Heat a small skillet over medium heat and add a little butter or oil. Sauté onions until golden brown. Or add raw onions to the hash brown ingredients.
In a large bowl add hash browns, 1/2 cup melted butter, chicken soup, sour cream, seasoned salt, pepper, cheese, and onion. Stir to combine.
Spread mixture in the bottom of prepared casserole dish and smooth out. Top with crushed buttered corn flakes and smooth in an even layer. Bake for 35-45 minutes or until hot and bubbly and top is golden brown.
Tips:
Make ahead-
Assemble all the ingredients minus the topping. Place in the refrigerator up to two days in advance. Place on the counter 30-minutes before baking. Add topping and follow baking temperatures and time.
