Harvest Potatoes (better known as funeral potatoes) is an irresistible, cheesy hash brown potato dish that you can whip up in minutes. This recipe checks all the marks when it comes to a rich, decadent side dish. It’s creamy, cheesy, po-ta-toe-ie, and has a light crunchy topping to balance it all out.
I’ve been sharing a few of my mom’s recipes from a cookbook she put together for us kids years ago and this one definitely hits my top 5. Not only is it insanely easy to make, it’s also insanely delicious. This is the kind of recipe you might only have one or two times a year but when you do, it’s heavenly.
Harvest Potatoes could be a casual side with roasted chicken, an easy recipe for your brunch menu, or paired with other great dishes at your next holiday table. Ahem.. Easter.
Ingredients:
- Frozen hash browns– use shredded or cubed
- Cream of chicken soup– or cream of mushroom or celery
- Sour cream– full-fat Greek yogurt will also work
- Sharp cheddar– substitute with pepper Jack, Colby Jack, or Monterey Jack
- Butter– use melted salted or unsalted butter
- Seasoned salt– or use Kosher salt
- Black pepper
- Yellow onion– sweet or red onion
- Plain corn flakes- panko crumbs, crushed butter crackers, or plain bread crumbs will also work
How To Make Harvest Potatoes:
Step 1. Heat oven to 350℉ and spray a 9×13 inch baking dish with non-stick cooking spray. Mix together corn flakes or bread crumbs with melted butter until combined. Set aside.
Step 2. (Optional) Sauté onions with a little butter until golden brown. Or just add them raw with the hash brown mixture.
Step 3. In a large bowl add thawed hash browns, melted butter, cream of chicken soup, sour cream, seasoned salt, pepper, cheese, and browned onions. Stir to combine.
Step 4. Spread mixture in prepared baking dish and smooth out. Top with crumb mixture and bake for 35-45 minutes or until hot and bubbly and topping is browned.
Make Ahead:
Assemble all the ingredients minus the topping. Place in the refrigerator up to two days in advance. Place on the counter 30-minutes before baking. Add topping and follow baking temperatures and time.

Ingredients
- 1 (32) oz pkg. frozen hash browns, thawed
- 3/4 cup melted butter, divided
- 1 (10) oz can cream of chicken, undiluted
- 1 cup sour cream
- 1 1/2 tsp seasoned salt
- 1/2 tsp ground black pepper
- 2 cups shredded sharp cheddar cheese
- 1 small yellow onion, diced fine
- 2 cups crushed plain corn flakes or panko crumbs, plain bread crumbs, or crushed butter crackers
Instructions
Heat oven to 350℉ and spray a 2 qt baking dish with non-stick cooking spray.
- Crush corn flakes in a large Ziploc bag. Add 1/4 cup melted butter and toss to combine. Set aside.
- (Optional) Heat a small skillet over medium heat and add a little butter or oil. Sauté onions until golden brown. Or add raw onions to the hash brown ingredients.
- In a large bowl add hash browns, 1/2 cup melted butter, chicken soup, sour cream, seasoned salt, pepper, cheese, and onion. Stir to combine.
- Spread mixture in the bottom of prepared casserole dish and smooth out. Top with crushed buttered corn flakes and smooth in an even layer. Bake for 35-45 minutes or until hot and bubbly and top is golden brown.
