Ingredients
  

Strawberry glaze:

  • 1 cup mashed fresh strawberries or use frozen and thaw first
  • 1/4 cup granulated sugar
  • 1 tbsp corn starch

Pizza crust:

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1 stick softened butter

Cream cheese spread:

  • 8 oz room temperature cream cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Extra toppings:

  • fresh sliced strawberries, blackberries, blueberries, or raspberries
  • cool whip topping

Instructions
 

Preheat oven to 325℉.

  • Combine mashed strawberries, sugar, and corn starch in a small sauce pan. Bring to a simmer over low heat and cook until sauce is thickened and berries are soft, stirring often, about 8-10 minutes. Cool completely.
  • While the berry sauce is cooking, make the crust. Combine flour, powdered sugar, and butter in a medium bowl until dough forms. I use my hands to work it into a ball shape. Pat dough flat onto a pizza pan or large sheet pan lined with parchment paper, about 1/8-inch thick. Bake in preheated oven for 15-minutes. Cool completely.
  • While the crust is baking combine softened cream cheese with vanilla and powdered sugar using a hand mixer until smooth and creamy.
  • When the strawberry sauce and crust have cooled, assemble the pizza. Spread cream cheese evenly over crust, pour strawberry sauce over cream cheese and smooth out, then top with fresh sliced strawberries and other berries if you like. Dollop the top with cool whip, slice and serve. See notes for refrigeration option.

Notes

Tips:
  • Be careful not to overcook the crust. It should be tender like a sugar cookie. Each oven is different so start checking at the 12-minute mark for a golden brown color around the edges.
  • Other berry options for fruit pizza. If you prefer to make your berry compote using a different berry other than strawberries, you can use blueberries or raspberries to make your glaze.
  • Make sure strawberry sauce and crust are completely cooled. This is important so the ingredients set up well. You can place the strawberry sauce in the refrigerator to speed up the process.
  • Place the pizza in the refrigerator after you assemble it. Strawberry pizza can be enjoyed right away but it will slice and stay together better if you allow it to set up in the refrigerator for at least 30-minutes prior to serving.
  • For a traditional strawberry pizza. Spread cool whip topping evenly over the berry sauce then top with sliced berries.
  • Make ahead. This can be made 1-day in advance. Just make sure to cover the top with plastic wrap so it stays and looks fresh.
