Can we just take a moment to enjoy this beauty….⬆

I mean, look at that gorgeous red color! It’s so inviting, isn’t it? This is another great recipe from my moms cookbook that was always a hit with our family when she made it. It’s a wonderful dessert for any occasion that’s super delicious and fun to make too!

The History Of Fruit Pizza:

For all you history buffs that might enjoy a little back story on fruit pizza…. Strawberry Pizza and many “dishes similar to fruit pizza have been made since at least the 6th century BC when Persian soldiers baked flatbreads with cheese and dates on top of their battle shields“. Wow, how cool is that! According to Wikipedia, “The modern pizza is attributed to Naples Italy in the 18th century, yet it wasn’t until sometime between the end of World War II and the 1980s that there is record of modern dessert pizzas.”

Strawberry Pizza:

Is another version of the modern day fruit pizza, and if you’ve had the pleasure of enjoying this delightful dessert, you know how good it is. I love this recipe because I don’t have to wait until berries are in-season to enjoy it. Thanks to the berry compote cooked down with sugar, it’s wonderfully sweet and flavorful. I also love that it looks beautiful and fancy but it’s super easy to put together.

Ingredients:

  • All-purpose flour
  • Powdered sugar
  • Butter
  • Cream cheese
  • Vanilla extract
  • Strawberries
  • Granulated Sugar
  • Corn starch
  • Cool whip
  • Blackberries, blueberries, and raspberries to garnish (optional)

Other Options For A Berry Pizza:

If you prefer to make your berry compote using a different berry other than strawberries, you can use blueberries or raspberries to make your glaze. It would be fun to make two different variations if you’re serving a crowd so everyone can choose their favorite berry flavor.

How To Make Strawberry Pizza:

Step 1. Preheat oven to 325℉.

Step 2. Mash strawberries in a medium bowl then transfer to a small saucepan. Add granulated sugar and corn starch. Bring to a simmer and cook until sauce is thickened and berries are soft, stirring often. Cool completely.

Step 3. While the berry sauce is cooking, make the crust. Combine flour, powdered sugar, and butter in a medium bowl until dough forms. I use my hands to work it into a ball shape. Pat dough flat onto a pizza pan or large sheet pan about 1/8-inch thick. Bake in preheated oven for 15-minutes. Cool completely.

Step 4. While the crust is baking combine softened cream cheese with vanilla and powdered sugar using a hand mixer until smooth and creamy.

Step 5. When the strawberry sauce and crust have cooled, assemble the pizza. Spread cream cheese evenly over crust, pour strawberry sauce over cream cheese and smooth out, then top with fresh sliced strawberries and other berries if you like. Dollop the top with cool whip, slice and serve.

Recipe Tips:

  • Be careful not to overcook the crust. It should be tender like a sugar cookie. Each oven is different so start checking at the 12-minute mark for a golden brown color around the edges.
  • Make sure strawberry sauce and crust are completely cooled. This is important so the ingredients set up well. You can place the strawberry sauce in the refrigerator to speed up the process.
  • Place the pizza in the refrigerator after you assemble it. Strawberry pizza can be enjoyed right away but it will slice and stay together better if you allow it to set up in the refrigerator for at least 30-minutes prior to serving.
  • For a traditional strawberry pizza. Spread cool whip topping evenly over the berry sauce then top with sliced berries.
  • Make ahead. This can be made 1-day in advance. Just make sure to cover the top with plastic wrap so it stays and looks fresh.
