- 1 pound fresh green beans washed and ends trimmed
- 2 1/2 tbsp butter, divided
- 1/4 cup diced yellow onions
- 1/3 cup sliced or slivered almonds
- 1/2 lemon, juiced
- salt and pepper to taste
Bring a pot of water to a boil. Add green beans and boil for for 4-5 minutes until tender. Drain and rinse with cold water. Pat dry with paper towels just to make sure they aren’t dripping wet.
Meanwhile, heat a large skillet to medium heat and add 1 1/2 tablespoons of butter and 1/4 cup onions. Cook onions until softened, about 3-4 minutes. Add almonds and toast stirring frequently until golden brown, about 4-minutes. Toss in green beans along with the remaining 1/2 tablespoon of butter. Season with salt and pepper to taste. Squeeze fresh lemon juice over the beans and serve immediately or keep warm until ready to eat.
