Green Beans Almondine is a classic French side dish made with fresh green beans, butter, and toasted almonds. It’s an easy yet elegant recipe perfect for the holidays, pairing with a fancy meal, or serve alongside a casual weeknight dinner. Super versatile and easy to put together!

If you think you don’t like green beans this variation just might win you over! Not only do the beans have great texture but they have a beautiful toasted buttery taste thanks to the butter and almonds. I like to sauté onions for additional flavor, and a generous squeeze of lemon juice for freshness and zest.

This recipe comes together quickly so don’t let the fancy sliced almonds or the gorgeous photos intimidate you. 😉 You’ll appreciate having another option during the weekday when you want something a little extra without all the work.

  • Butter

  • Sliced or slivered almonds
  • Fresh lemon juice
  • Salt and pepper to taste

Green Beans Almondine has the same vibes as my Sautéed Green Beans with Bacon, only without the bacon! Both are delicious and simple to make and make a great side dish for any occasion!



Making Green Beans Almondine:

Step 1. Bring a pot of water to a boil. Add green beans and boil for for 4-5 minutes until tender. Drain and rinse with cold water. Pat dry with paper towels just to make sure they aren’t dripping wet.

Step 2. Meanwhile, heat a large skillet to medium heat and add butter and onions. Cook onions until softened. Stir in almonds and toast until golden brown. Toss in green beans and a bit more butter. Taste for seasonings then squeeze fresh lemon juice over the beans. Serve immediately or keep warm until ready to eat.

Can I make Green Beans Almondine Ahead Of Time?

It is my recommendation that sautéed green beans in general should be eaten the same day. They will still have great flavor on the second day but the texture will change and won’t be as fresh.

Recipe Tips:

  • No need to put green beans in an ice bath after blanching them. Rinsing the green beans in cold water will keep them bright green and stop the cooking.
  • For easy prep, use a package of pre-trimmed and washed green beans.

  • 1/3 cup sliced or slivered almonds

Squeeze fresh lemon juice over the beans and serve immediately or keep warm until ready to eat.
