Loaded Cauliflower Casserole is an easy low-carb side dish that's creamy and cheesy and topped with crispy bacon and chives. Perfect for quick weeknight sides, holiday dinners, and even on it's own, it's so good!
1 large head of cauliflower, about 4 cups florets cut in small pieces
3ozlight cream cheese
1/2cupshredded mozzarella cheese
3/4cupreduced fat Mexican cheeseany good melting cheese will work
1 1/2tspranch seasoning mix
1/2tspsalt
1/2tspground black pepper
3slices bacon cooked crispy and crumbled
handful chopped chives or sliced green onion
Instructions
Preheat oven to 425°F and prepare a 3 quart casserole dish with non-stick cooking spray
Place cauliflower florets in a microwave safe dish with 1/2 cup water and cover with plastic wrap. Cook on high for 10 minutes. Drain liquid and set aside.
While cauliflower cooks combine cream cheese, both mozzarella and Mexican cheese, ranch mix, salt and pepper in large mixing bowl.
Add hot cauliflower to cheese mixture and gently toss to coat florets. Place in the prepared casserole dish spreading out the cauliflower mixture to the edges.
Bake for 10 minutes uncovered. Turn the broiler on high and move casserole to the top rack. Broil for 1-2 minutes until golden in spots.
Remove from heat and sprinkle with bacon and chives or green onions. Serve right away!
