Creamy Mashed Cauliflower

Mashed cauliflower doesn't have to be an alternative to mashed potatoes. While lower in carbs, yes, this side dish is absolutely dreamy and creamy and so incredibly good. Even my meat and taters hubby welcomes a generous helping.

Ingredients

  • 1 head of cauliflower cut in small florets with most of the stems removed, about 4 cups worth
  • 1/2 cup water
  • 2 tbsp butter
  • 2 oz light cream cheese optional
  • 1/2 tsp salt
  • 1/4 tsp pepper

Additional add-ins and toppings

  • 2-3 roasted garlic cloves
  • 1/4-1/2 cup parmesan cheese or any other cheese you like
  • 1/4 tsp cayenne pepper
  • Chopped chives, sliced green onion, or fresh herbs
  • Crispy bacon bits

Instructions

  • Once cauliflower is cooked, drain off liquid and add to a food processor or blender.
  • Add butter, cream cheese, salt & pepper. This is a good time to add additional ingredients like, roasted garlic, additional cheese, and spices.
  • Blend cauliflower about 1 minute. Scrape down the sides and blend another 30 seconds to 1 minute, or until creamy and smooth. Taste for seasonings and serve!
  • After serving you can add additional toppings.
