Ingredients

  • 2 sticks butter
  • 1 cup brown sugar
  • 54 Ritz crackers, almost 2 full sleeves
  • 1 cup semi-sweet chocolate chips
  • 1 cup peanut butter chips
  • 3/4 cup chopped roasted pecans

Instructions

Heat oven to 400℉ and line a large sheet pan (11×17) with foil and spray generously with non-stick cooking spray, making sure to get around the edges.

  • Lay Ritz crackers in a single layer on prepared sheet pan and set aside.
  • Melt butter and brown sugar in a small pot over the stove on medium low heat. Stir often until melted. Once melted and bubbling, allow to bubble for 3-4 minutes until thickened and resembles a dark caramel color. Keep an eye on the heat as it can burn easily.
  • Pour hot toffee mixture evenly over Ritz crackers. Use a small spatula to spread over each cracker. This sets up fast so work quickly. Place in the oven for 5-minutes. Turn off the oven and remove the pan.
  • While the crackers and toffee are hot, sprinkle the top evenly with the chocolate and peanut butter chips. Allow to sit for 5-minutes. You can also pop this back in the warm oven that’s been turned off for 2-3 minutes to help melt the chips faster.
  • Once the chips are soft, use a small knife or spatula to spread evenly over the crackers. Top with chopped pecans and allow to sit at room temperature for 30-minutes. Place in the fridge or freezer to harden. Once it’s firm, remove the foil and break into large or small pieces. Keep refrigerated until ready to eat.

Notes

Tips:
Substitutions-
Saltine crackers can be used in place of the Ritz and use your favorite chocolate baking chips such as milk or dark chocolate. Butter scotch chips would also be a great addition. And if you don’t like pecans, almonds and hazelnuts also work great, or leave the nuts off all together.
  • For best results, keep Ritz cracker crack in the refrigerator in an airtight container until ready to serve or give away. This will be easier to handle as the chocolate on top can be messy once at room temperature.
  • Spray foil lined baking sheet with a of generous amount of non-stick cooking spray. Or you can spread a thin layer of butter down first. When you think you’ve sprayed too much, do a bit more.
  • Keep a close eye on the crackers in the oven as they can go from perfect to burnt very quickly.
  • Don’t walk away from the butter and brown sugar. This also can burn quickly so adjust the temperature as needed.
