I love everything about the Autumn season. The beautiful leaves. The cozy sweaters and candles. The comfort foods and warm drinks. I can’t get enough! Although once the fall and holiday season has passed, I’m ready for summer, ha!

This Harvest Green Salad with Honey Apple Cider Dressing has all the fall vibes. Featuring tender greens, sweet apples, roasted hazelnuts, golden raisins, and salty parmesan cheese. The dressing is simple with olive oil, honey, apple cider vinegar, and Dijon mustard. It’s creamy, sweet, and tangy.

This salad is great for any occasion. A casual weeknight dinner, or a festive holiday table. The prep work is minimal so it’s perfect for a last minute idea. Plus, I’m telling you, everyone will love it! Every time I make this salad there is nothing leftover.

Ingredients For Harvest Green Salad:

  • Mixed greens
  • Apple, chopped
  • Roasted hazelnuts, chopped
  • Golden raisins
  • Red onion, sliced
  • Parmesan cheese, shaved or shredded
  • Lemon juice

Ingredients For Honey Apple Cider Dressing:

  • Olive oil
  • Apple cider vinegar
  • Honey
  • Dijon mustard
  • Salt and pepper


Store Bought Short-cuts:

This salad is relatively easy to put together but why not save even more time by using some store-brand short-cuts.

  • Organic Spring Greens that are triple washed. This saves me a lot of prep work.
  • Roasted Nuts are readily available at most grocery stores. This saves me a dirty pan and the roasting time. I love that!
  • Parmesan Cheese is another way to save time and money. Most grocery stores have packaged shaved parmesan which is just fine in this recipe.

Assembling Harvest Salad:

Step 1. Combine all the dressing ingredients in a mason jar and shake until well combined. If using a bowl, whisk until creamy and smooth. Set in the fridge until ready to use.

Step 2. Add greens to a large bowl. Toss apples in lemon juice then scatter over the top of the greens. Next, layer with hazelnuts, raisins, red onion, and parmesan cheese. When ready to serve, toss with desired amount of dressing or let everyone dress their own.



Make Ahead:

If making this in advance, mix up the dressing and prep the apples, nuts, and onion. Store prepared items in the refrigerator until ready to assemble. Make sure to toss the apples in lemon juice so they don’t turn brown.

Substitutions:

  • Fruit- Swap out the apple with pears, grapes, or pomegranate. Or add a combination of fruits.
  • Nuts- Roasted pecans, almonds, and walnuts work well in this salad.
  • Cheese- Use crumbled goat cheese, feta, gorgonzola, or sharp white cheddar.

Ingredients
  

Salad

  • 6-8 cups organic spring greens, triple washed
  • 1 sweet apple, cut in 1/2 inch pieces I use a honey crisp apple
  • 1 tbsp lemon juice
  • 1/2 cup roasted hazelnuts, chopped
  • 1/2 cup golden raisins
  • 1/2 cup red onion, sliced thin
  • shaved parmesan cheese, to taste

Dressing

  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1 tbsp Dijon mustard
  • salt and pepper to taste

Instructions
 

  • In a mason jar add all the dressing ingredients. Secure a fitted lid and shake until combined. If using a bowl, whisk until creamy and slightly thickened. Keep refrigerated until ready to use.
  • Prepare apples and toss with lemon juice. In a large salad bowl add greens, then layer with apples, nuts, raisins, onion, and parmesan cheese. Add dressing and toss gently or serve dressing on the side.
