If there is one thing everyone loves it’s taco flavored recipes, and you’re sure to please your family or guests with these Mini Taco Bites. These are fun to make, easy to customize with your favorite taco toppings, and completely irresistible. An awesome appetizer, snack, or simple dinner idea.
You’ll find a lot of taco bite recipes made with wonton wrappers which is super yummy, but I love the simplicity of opening a bag of Tostitos scoops. They have great crunch and don’t require a long baking time. I just place them on a sheet pan, fill with taco meat, and bake!
Simple Ingredients:
- Avocado or olive oil
- Lean ground turkey or beef
- Onion
- Taco seasoning (store packet or homemade)
- Mexican cheese blend
- Tostitos scoops chips
Optional Toppings:
- Fresh tomatoes
- Cilantro
- Sour cream
- Salsa
- Green onions
How to assemble Mini Taco Cups:
Step 1. Place Tostitos scoops on a large sheet pan lined with parchment paper. Toast in a 350℉ oven for 4-5 minutes.
Step 2. Meanwhile, heat a skillet to medium heat and add avocado oil and ground turkey. Cook and crumble meat until no longer pink.
Step 3. Add onions and cook until soft. Stir in the taco seasoning and toast for a minute then add water. Once water has evaporated turn off the heat and stir in the cheese until melted.
Step 4. Fill chips with meat mixture then top with cheese. Place back in the oven for 5-minutes or until the cheese on top is melted. Serve immediately.
Recipe Tips:
- To prevent soggy chips on the bottom– make sure there isn’t any excess grease or liquid in the meat mixture.
- Making ahead of time– you can make the taco meat ahead of time and reheat when you’re ready to assemble in the scoops.
- Use your favorite cheese– this is a great recipe to use Colby Jack, Monterey Jack, Pepper Jack, any cheese ending in Jack (LOL) sharp cheddar, regular cheddar, you get the point. As long as it melts beautifully it’s a great option.
- Homemade taco seasoning– my homemade taco seasoning is awesome and so easy to make. You’ll love having it on hand for recipes like this!

Ingredients
- 1 tbsp avocado or olive oil
- 1 pound lean ground turkey or beef If using beef make sure to remove all the grease
- 1/2 small onion diced super fine
- 2 tbsp homemade taco seasoning or 1 store packet
- 1/4 cup water
- 1 cup shredded Mexican cheese blend, divided
- 35 Tostitos scoops
Optional toppings:
- fresh chopped tomatoes
- sliced green onions
- sour cream
- fresh chopped cilantro
- finely chopped lettuce
- salsa
Instructions
Preheat oven to 350℉ and line a large sheet pan with parchment paper.
- Place Tostitos scoops on prepared sheet pan. See post image. Bake in preheated oven for 4-5 minutes.
- Meanwhile heat a skillet to medium heat. Add oil and ground turkey. Cook meat breaking into small crumbles until no longer pink.
- Once meat is cooked, remove any excess grease. Add onion and cook until softened then stir in the taco seasoning. Toast seasoning for 1-minute then add water. Cook until all the water has evaporated. Remove from the heat and stir in 1/2 cup cheese.
- Fill pre-baked scoops with meat mixture, then top with additional cheese. Place back in the oven for another 5-7 minutes or until cheese is fully melted. Serve immediately with your favorite taco toppings.
