I’ve been making some fun recipes for my YouTube channel using coleslaw mix. Having convenient items like this makes preparing and planning recipes much easier. Coleslaw mix is an easy ingredient to add giving dishes extra fiber, crunch, and a mild flavor.

My inspiration for this Coleslaw Pasta Salad came from Together as Family and Chelsea’s Messy Apron. Both recipes have a lot to offer so I took the best of each one and came up with a version that fit our taste. I was so happy with how this salad turned out, it’s currently my favorite pasta salad on my website! And that is saying a lot because I love all my pasta salad recipes.

The best part about this recipe is it will still be just as delicious and fresh several days later. We enjoyed this for 5-days until it was completely gone! It’s so flavorful and I love all the veggies which give it awesome texture. The larger spiral pasta makes this super filling and the sweet and tangy dressing is outstanding!

Pasta Ingredients:

  • Spiral pasta
  • Celery
  • Green pepper
  • Cucumber
  • Red onion
  • Coleslaw mix

Dressing Ingredients:

  • Mayo
  • Apple cider vinegar
  • Sugar
  • Lemon juice
  • Fresh dill
  • Garlic powder
  • Paprika
  • Salt and pepper

Substitutions and variations:

You can absolutely make this your own by adding ingredients you love. The coleslaw mix is a must in my opinion but aside from that, have fun with other vegetables like broccoli, cauliflower, and fresh tomatoes, just to name a few.

Do I have to use Mayo?

No! While the mayonnaise (my favorite brand is Dukes) is a classic coleslaw ingredient, you can substitute with full-fat, plain Greek yogurt. Or use a combination of both to balance out the tanginess of the yogurt.

Coleslaw Pasta Salad will seriously be a total hit. It’s unique crunch from the the shredded cabbage, along with the BEST creamy dressing will win over everyone’s hearts.

How To Make Coleslaw Pasta Salad:

Step 1. Prepare pasta according to the package directions for al’ dente cooked. Once the pasta is cooked drain and rinse well with cold water.

Step 2. Meanwhile prepare all the veggies and combine the dressing ingredients in a small bowl.

Step 3. To a large bowl add the pasta and veggies, then fold in the dressing with a large spoon. Serve immediately or store in the fridge until ready to eat.

How long does Coleslaw Pasta Salad Last In The refrigerator?

Coleslaw Pasta Salad will keep 5-6 days in a sealed container in the refrigerator. The cabbage does not get soggy and it stays well dressed and creamy.

How long can I leave this salad out at room temperature?

A rule of thumb with any salad containing mayonnaise is no more than 2 hours.

Ingredients

Pasta ingredients:

  • 2 cups spiral pasta such as rotini or fusilli
  • 2 celery stalks, diced
  • 1 medium green pepper, diced
  • 1 English cucumber sliced in half moon shapes
  • 1/4-1/2 cup red onion diced small
  • 1 (14) ounce bag coleslaw mix

Dressing ingredients:

  • 1 1/2 cups good quality mayo I use Dukes
  • 1/4 cup apple cider vinegar
  • 1/4 cup white sugar
  • 1/2 lemon juiced
  • 2 tbsp fresh dill or parsley optional
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • salt and pepper to taste

Instructions

  • Prepare pasta according to the package directions for al’ dente. Once the pasta is cooked drain and rinse well with cold water in a colander.
  • Meanwhile, prepare the veggies then combine all the dressing ingredients in a small bowl until creamy and smooth.
