I started making this 7-Layer Taco Bean Dip when my husband and I first got married. I wasn’t the greatest cook in those earlier years so recipes like this (especially ones I didn’t have to cook) were super helpful when I wanted to make something easy, impressive, and still yummy.

This dip has a mild taco flavor using taco seasoning and Mexican inspired ingredients like refried beans, green chiles, sour cream and a Mexican cheese blend. It’s simple yet so good!

Crispy tortilla chips are the obvious choice for scooping up all the delicious layers, but veggies sticks are also great and a nice option for those wanting to eat a little lighter.

Equipment

  • 2 QT dish

Ingredients
  

  • 1 15 oz can non-fat refried beans
  • 1 cup light sour cream
  • 1 cup chopped Roma tomatoes with
  • 2-3 tbsp low sodium taco seasoning
  • 2 avocados mashed with 1/2 lime juiced
  • 1 2.5 oz can sliced black olives, reserve a few for top
  • 1 4 oz can mild green chlies, drained
  • 1 cup reduced-fat Mexican cheese
  • 1/4 cup sliced green onion

Instructions
 

  • Layer ingredients in 2 qt dish starting with refried beans and ending with reserved olives and green onions. Chill for at least 1 hour or up to 1 day in advance. Serve with tortilla chips and/or veggie sticks.
