When I was waitressing in high school at our local Denny’s they had a tuna melt on the menu that I absolutely loved. It was the perfect balance of all the textures you would want in a melt. Creamy, cheesy, buttery, and toasty. So delish! Unfortunately my family isn’t big on tuna melts so I rarely make them. I stumbled across a delicious looking tuna melt recipe online and a crazy thought came to me… why don’t I just replace the tuna for chicken! I guess I’m a slow learner.
Well let me tell you, friend, the swap out was even better than I expected. This sandwich hits every check point for a GOOD melt. This Ultimate Chicken Melt is so incredibly delicious, I’m so happy I finally found my Denny’s tuna melt match, along with something my family enjoys.
Ingredients:
- Cooked chicken
- Mayo
- Honey mustard
- Celery
- Fresh parsley
- Salt and pepper
- Red onion
- Cheddar cheese
- Tomatoes
- Thick bread
- Butter
A few Tips About The Ingredients:
- Chicken– I use chicken breast meat for this recipe but you could use dark meat or a combination of both.
- Mayo– This recipe is not heavy on the mayo. Just enough to give it some moisture. Light mayo would also work if you want to decrease the calories.
- Honey mustard– The subtleness of the honey mustard gives the chicken a slight sweetness and tang. You could also use regular yellow mustard or Dijon for a little more zip.
- Red onion- Sometimes when onion is mixed in with chicken salad or tuna salad recipes it can be overpowering. I like to incorporate the onion by adding a few slices to the chicken salad mixture after it’s placed on the bread. This makes it more mild and you can control the onion flavor for each sandwich.
- Cheese– Cheddar is a classic tuna (in this case chicken) melt ingredient but any good melting cheese will work perfect. Pepper jack would be fun and give it a nice little kick.
- Bread– I like to use a soft, thick honey wheat bread for melts. It not only adds a little boost of nutrition, but a thicker bread will be sturdier and handle all the ingredients when it grills.
How To Assemble Ultimate Chicken Melts:
Step 1. In a medium bowl combine chopped chicken, mayo, honey mustard, celery, parsley, salt and pepper.
Step 2. Butter one side of each bread slice and flip over. On the non-buttered side add two thin slices of cheddar cheese. Divide chicken salad mixture between two of the slices of bread, top with red onion slices, tomato slice, and two more slices of cheese. Place the other bread slice on top and gently press down.

Step 3. Heat a griddle or a large non-stick skillet to medium low heat. Gently place assembled sandwich in the hot pan. Place the lid on if using a skillet and grill for 3-4 minutes per side, or until deep golden brown and cheese is melted. Slice and serve immediately.
Is Ultimate Chicken Melt Healthy?
Aside from the cheese and a little mayo this sandwich is relatively healthy. It is high in protein (a whopping 42 grams) made with whole grain bread, and filled with a handful of veggies. That classifies as healthy in my opinion!
Recipe Tips:
- Chicken– make sure to finely chop chicken for the best texture. I usually shred the chicken first then chop fine with a large knife. This is also a great recipe to use up leftover chicken or a rotisserie from the grocery store.
- Grilling– make sure to watch the temperature of your griddle or pan to make sure the bread doesn’t get too browned before the cheese has a chance to melt.

Ultimate Chicken Melt
Ingredients
- 1 large cooked chicken breast, shredded, then chopped fine using a knife about 1 1/2 cups chicken
- 2 tbsp mayo
- 1 1/2 tsp honey mustard
- 1 small celery stalk diced in small pieces
- 2 tbsp chopped fresh parsley optional
- salt and pepper to taste
- red onion, thinly sliced use desired amount
- 8 thin cheddar cheese slices
- 2 tomato slices from a large tomato
- softened butter for spreading on bread
- 4 thick bread slices, like honey wheat
Instructions
- In a medium bowl combine chicken, mayo, honey mustard, celery, parsley, and salt and pepper to taste.
- Butter one side of each bread slice then flip over. On the non-buttered side add two slices of cheddar cheese. A total of 4 slices per sandwich.
- Place half of the chicken salad mixture on one half of one sandwich. Repeat with the remaining chicken mixture for the other sandwich. Top each sandwich with red onion slices, one tomato slice, and finally two more slices of cheese. Place the other bread slice on top and gently press down.
- Heat a griddle or large non-stick skillet to medium low heat. Gently place assembled sandwich in hot pan. Place the lid on if using a skillet and grill for 3-4 minutes per side, or until deep golden brown and cheese is melted. Slice in half and serve immediately.
