For many years my daughter and I had a standing baked potato night we looked forward to every week. My husband had to work late on Wednesdays so it was our night to have something casual for dinner. We watched Little House On The Prairie while we ate our baked potatoes, it was the best! Also you can find my favorite method for baking potatoes HERE!

Life is a little fuller now that our daughter is 18 and busy planning her escape, lol, just kidding, but we do still enjoy frequent baked potato nights. I thought it would be fun to try something a little different and serve more of a deconstructed baked potato in the form of chips and dip.

Loaded Baked Potato Dip is perfect for a casual Friday night in, or sharing as a game day snack. It could not be any easier to make, and everyone will love it!

Does Loaded Baked Potato Dip Have Potatoes?

While this would seem like an obvious ingredient this recipe does not have potatoes. This is basically all the awesome toppings you would put on a potato in a creamy, cheesy dip. It’s simple to prepare, no cooking except the bacon, and can be enjoyed in less than an hour. It’s fun to set out with classic potato chips but we also love to scoop the dip with waffle fries. So easy and tasty!



Ingredients:

  • Sour Cream
  • Cream cheese
  • Cheddar cheese
  • Bacon
  • Green onions
  • Ranch seasoning mix
  • Black pepper

Why Is there cream cheese in baked potato dip?

The cream cheese gives this dip a thicker consistency. It also adds another layer of rich cheesy flavor. It’s a subtle amount but makes a big difference. You can certainly leave it out and add more sour cream.

How to Make Loaded Baked Potato Dip:

  • Cook bacon and cool completely.
  • Combine the rest of the dip ingredients in a bowl until well combined, reserving a few green onions and cheese for the top. Refrigerate at least 1 hour or up to 24 hours.
  • When ready to serve, crumble bacon pieces over the top and garnish with the extra green onion slices and cheese.
  • Serve with your favorite potato chips or waffle fries.

Recipe Tips:

  • Bacon– For a fast and easy clean up, cook bacon in the microwave. Layer several paper towels to a microwave safe plate, then lay out the slices of bacon. Cover with paper towels and cook for 5-6 minutes or until crispy. 
  • Potato chips– I find the best potato chips for this dip are either kettle or ruffles ridges. They are sturdier so won’t break as easily when scooping up the creamy dip.
  • Leftovers– If you have any. Add a dollop or two in with mashed potatoes it will totally elevate them. The leftover dip is also great over buttered baked potatoes.

Ingredients

  • 2 cups sour cream
  • 4 ounces softened cream cheese
  • 1 cup shredded cheddar cheese, plus more for garnish
  • 6-7 slices bacon cooked crispy
  • 1/4 cup green onion slices, plus more for garnish
  • 2 tsp ranch seasoning mix
  • 1 tsp black pepper

Instructions

  • Combine all the ingredients minus the bacon in a medium bowl until well incorporated. Refrigerate for at least 1-hour or up to 24 hours.
  • Once dip is chilled, crumble bacon over the top along with extra green onion slices and cheddar cheese. Serve with potato chips and/or baked waffle fries.
